Join us for an Italian Food Tour at Central Market in Florence, Italy as we sample numerous savory and sweet dishes on the second level of the market. Prior to arriving at the Central Market (Mercato Centrale) we had this idea that it would be upscale and touristy with prices to match but were pleasantly surprised by how affordable it was to grab tasty bites on a budget. We ended up spending just over 23 Euros total for the two of us to sample a lot of different food at Florence Central Market (Mercato di San Lorenzo). We were here yesterday to buy some produce and a few groceries to cook an Italian meal at home. And then we noticed that on the second floor they have a whole bunch of restaurants and deli shops so we figured let s come back and actually have lunch here. That is the plan for today. We ve just arrived but we re going to have a little wander through to see what is available and then we ll start buying little bites. We ve got to scout it out really well before we pick. We ve got our first two items. That kind of startled you there. Yeah, I was admiring my cheese. We got a little cone of parmigiano. Parmesan. Parmigiano Reggiano. This was 3.50 in Euros. The best part is it comes in these massive cubes and you ve got this little fork to pierce them with so look at the size of this. All of the cheeses, the meats, the pastas, the pizzas. Wow. The gelatos. It is like this is really good. Italy is making me chubby. And you know what is next. This little thing. This little thing. I believe this was called Burrata. And it looks like it this looks like focaccia bread or something. It has kind of been made into a sandwich. It is a sandwich. It has prosciutto. I ll kind of lift it up here so you can see. It appears I could be wrong but it appears to have a some salad. Some salad. Ensalada. I think there is some creamy cheese as well. It was 6 Euros. We found our next dish. This is called Trapizzino. And it looks amazing. Basically this is pizza dough in the form of a triangle and then it has been stuffed with filling. You can choose what filling you want. They have a whole bunch to choose from but we went with the eggplant and the tomato sauce a little bit of pesto and then parmesan cheese on top coming in at 4 Euros. Moving on to snack number four. So this is something we ve seen a few times and we ve wanted to try it. And we ve never had it. It is basically a giant crispy rice ball (arancini). Inside there is different flavors. We got the one with prosciutto for 3 Euros. Alright we re moving on to dessert. What do you got in your hands? We got two desserts. We did. But let s start with this one. So this is the Cannoli at 3 Euros. And instead of being stuffed with a cream of ricotta it is actually gelato made with ricotta cheese and we got rum and raisin gelato called Malaga at 3.50 Euros. That brings our total to 23 Euros for two people. Basically 11.50 per person. We got to eat a lot of like amazing delicious food. I mean this far exceeded my expectations. Hi, I m Cara Barrett, editor at Hodinkee, the leading online watch publication. Rolex is one of the few brands, if not the only brand that has a very specific aesthetic. They are sporty, they are active, they are tool watches that s kind of their main DNA. In the 50 s they came out with the Submariner, the Explorer, the Milgauss, the GMT and they were all watches that were designed and made to be used as tools. And so that s their bread and butter and it still is today. It kind of evolved into a luxury brand later in life which now is what they re known for. So that s kind of the interesting thing about them is they initially were tool watches which have now become luxury. Rolex is kind of one of those brands that sits on the lower end of the spectrum as far as luxury watches are concerned. The Submariner s $8,000. The entry-level watch at Rolex is $5,000 with the Oyster Perpetual. Their three qualities are self-winding, waterproof and precision. And they really focus on quality. It takes one year to make a Rolex. They go through extensive testing. The accuracy, the chronometer, the timing, it s all about telling the right time, keeping the right time. They also have extensive service work after, so if you ever have a problem with your Rolex, you can take it to them and they ll fix it. The clasp is opened and closed a thousand times before it leaves so you know that when you get it, it s not gonna break. The whole point of a Rolex is you buy one now, it will last you for 20 years if you take care of it. It will last you for 100 if you really take care of it. That s ultimately why they re so expensive because you re buying something that will last you a lifetime presumably. And something that you can pass down to other generations as well. In the collectors world, there s the vintage Rolex market. And there s a whole underground of different nuances and you know there s a GMT with a matte dial, a GMT with a gilt dial and there are all these tiny little details that change and they make a watch more or less valuable. There s the Paul Newman Daytona which sold for $17.8 million last fall and that s the most expensive Rolex that s ever sold at auction. The Paul Newman Daytona is a really good example where they came out with a Daytona back in the 70s and they put these exotic dials on them and they couldn t sell them. And now they re the most collectible watches on the vintage market. No one knows how many Rolexes are produced per year, no one knows how many Rolexes are produced per model. But there are specific ones, like the Rainbow Daytona that came out this year, rumored to have X amount made, but very small quantities. You don t ever know exactly what the number is, but you do know that there aren t that many. And they re hard to get. One of the best things about Rolex is anyone can wear any of them. They re very unisex and I think that that s refreshing cause a lot of times brands put a lot of diamonds on watches and kind of brand it as a woman s watch. Whereas Rolex does the same thing, but it s kind of unisex. I wear a lot of men s Rolex. But the ladies Datejust is actually, in two-tone, is actually the most sold Rolex model of all time. Which is a really fun fact.

Next our very own "Mr. Friday" gave us a tour of the whole island via golf cart. It ended at Soneva Fushi s private yacht where we jumped off 7 meters into the ocean! We then took a boat to our VERY OWN ISLAND! They packed us a cooler and a cell phone and left us on the most beautiful tiny island with only an umbrella and overwater hammock! It was raining and cloudy when they dropped us off, but thankfully it cleared up so we quickly frolicked along the beach and flew the drone, and it went by WAY too fast! Next, we grabbed a quick lunch which just happened to include a buffet of my favorite food - SUSHI! And then we ride 25 minutes via speedboat to a snorkeling spot with the island s marine biologist (YEP). It was the bluest, warmest, clearest water we ve ever been in, and we saw sea turtles and huge sting rays! After that we got on ANOTHER boat for a dolphin sunset sail complete with champagne and gourmet snacks. We fixed one of the vortex cannon in a stationary position, and used a multi-axis microscope stage to align a second cannon to it… which sounds incredibly easy, until you realize that DYE density was an experiment all on its own. If the density of the dye mix was light than water, the vortex would go up. If the dye was more dense than water the vortex would fall. We had to overcome SO MANY VARIABLES to overcome and we basically spent about 4 hours figuring each variable. Water/dye temperature differential Water turbulence Water turbidity (cloudiness or haziness of a fluid) How to reset the aquarium Cannon Spacing Cannon Nozzle Cannon Shape Dye homogeneity in the vortex itself The piston displacement volume The piston stroke speed Rubber diaphragm tension, would make one side fire faster than the other. Water or air to drive diaphram? Firing speed (too slow and they drift, too fast and turbulence tears apart secondaries) We did a complete redesign of the cannon 3 different times. The Dye loading method was changed several times At times we tried to maintain negative pressure on the cannon chamber… we also tried to put shutters on the front of the muzzle. Ultimately I decided it was ok to live with dye dripping out of the front. We had to premix the dyes and eventually we got there.
