Nothing better than a tender, juicy and flavorful steak. Dry aging a steak is one way to get that result. Another is wet ageing steak also. However these 2 methods takes time, usually 2-4 weeks. However there is a new method called warm aging, which is only possible with Sous Vide. In theory this allows the calpains enzymes to work on the steak and speed up the process.
