After you make this Thai red curry paste recipe (พริกแกงเผ็ด), you ll be able to make other extremely tasty Thai dishes. Here s the full recipe: http://wp.me/p4a4F7-2u8 Thai curry pastes make the base or foundation for numerous Thai dishes, from soups, to curries, to stir fries. You can easily go to the market in Thailand and buy freshly made pastes, but they just don t taste nearly as fresh as if you make it yourself. Also, you could go to the supermarket and buy your Thai curry paste in a can or plastic tub, but again, it would lack the fresh flavors that you ll get when you make it fresh yourself. In this recipe, I ll be making Thai red curry paste (พริกแกงเผ็ด), known in Thai as "prik gaeng ped". It s a combination of dried red spur chilies, with a host of other ingredients that include shallots, kaffir lime peel, garlic, white pepper, among other ingredients. There are a couple of ways to make this Thai red curry paste recipe (พริกแกงเผ็ด), but I think the best method is by hand, using an authentic Thai mortar and pestle to grind all the ingredients to a paste consistency. This does take some serious work, but the effort of slowly pounding the paste, ensures all the ingredients are pounded to perfection and all the oils of everything are released. Making it by hand, this recipe will take about 20 - 30 minutes or more to prepare, so it does take some time and energy to make by hand, but I can assure you that the final taste is amazing. Alternatively if you don t have a Thai mortar and pestle, you could blend all the ingredients in a blender or food processor - but if you have the time and muscle, go for it by hand. Here are all the ingredients that you ll need in this Thai red curry paste (prik gaeng ped พริกแกงเผ็ด): 3 teaspoons white pepper corns ½ teaspoon cumin powder ½ teaspoon coriander powder 8 dry red spur chilies (soaked in water for about 10 minutes to soften them) ½ teaspoon salt 10 - 14 small cloves of garlic 5 small shallots (Thai shallots are the size of grapes, so it s about 2 tablespoons worth) 1 tablespoon finely sliced lemongrass 1 tablespoon finely sliced coriander roots 1 tablespoon finely sliced galangal Skin of ½ kaffir lime ½ teaspoon of shrimp paste The directions on how to make this recipe are pretty easy, as long as you have all the ingredients and the equipment you need. In Thailand you ll find all these ingredients at just about every market, they are extremely commonly used in Thai cooking. However, even in the United States, at Asian supermarkets, I ve seen all these ingredients - so it shouldn t be hard to get everything together. Basically for the directions, all you have to do is first pound and mix the dry spices, including the white pepper, coriander powder and cumin, then set them aside. Then pound all the other ingredients together (watch the video for the best order), and just keep on pounding until you have a nice buttery Thai red curry paste. It took me about 20 minutes or more to get a nice paste, but the end result was so flavorful and so incredibly fragrant. Once you have made this Thai red curry paste (พริกแกงเผ็ด), you can then go on to make a number of other Thai dishes that use this paste. Khao soi (ข้าวซอย) is one of the most popular Thai dishes to eat in northern Thailand, especially in Chiang Mai and Chiang Rai. More details about Khao Soi Khun Yai (ข้าวซอยคุณยาย) here: http://www.eatingthaifood.com/2014/05/khao-soi-khun-yai-chiang-mai/ Khao soi (ข้าวซอย) is a Thai noodle dish that has origins in Burma. The basic part of the dish begins with a bowl of yellow egg noodles that are blanched and then combined with the all important curry gravy sauce which is made from coconut milk with a blend of dry spices. It s often nutty in flavor, slightly sweet, and flavorful from the dry spices. There are many different version of khao soi (ข้าวซอย), and some tend to be more spicy and flavorful, while other are more sweet and nutty - I prefer the former. So when I was searching for the best khao soi (ข้าวซอย) in Chiang Mai, I came across Khao Soi Khun Yai (ข้าวซอยคุณยาย) in a Travelfish article (http://www.travelfish.org/eatandmeet_profile/thailand/northern_thailand/chiang_mai/chiang_mai/1904) and decided to give it a try. Khao Soi Khun Yai (ข้าวซอยคุณยาย) in Thai means Grandmother s khao soi, and I don t think I ve ever had a bad experience dining on food from grandmother, so I was pretty excited to give it a try. As soon as I walked into the open air restaurant, I knew it was going to be my style. The restaurant was sort of street food style, but housed on the peaceful compound of the temple, away from the road, so it a nice and relaxing shaded place - a perfect environment for a perfect bowl of noodles. At Khao Soi Khun Yai (ข้าวซอยคุณยาย) they serve both khao soi (ข้าวซอย) and also kuay teow tom yam (ก๋วยเตี๋ยวต้มยำเส้นเล็ก), the popular version of Thai noodles in a sweet and sour tom yum broth. My wife actually order the tom yum noodles, and they were also wonderful, but I was more interested in tasting their khao soi. They normally have two different version, chicken and beef. So rather than having to make a hard decision, I decided to go for both - which I would highly recommend you do too - no need to make a decision. As soon as my bowls of khao soi (ข้าวซอย) were ready, they were delivered to our table, and I immediately loved the color of the broth, which was nice and dark red in color. Some bowl of khao soi, the broth is light and doesn t look all that flavorful. This was dark and red and you could just see all the spices and glorious flavors within it. I first tasted the broth, and then I went ahead and dumped in the rest of the condiments, mostly the roasted chili flakes to add some extra heat to it. The khao soi (ข้าวซอย) was incredibly good. The broth, or curry sauce was creamy and tasty, yet it wasn t too rich or sweet like it can sometimes be. It had a nice flavor blend of spices, and it was just balanced out perfection. The extra hit of roasted chili flakes added another wonderful dimension of flavor to my bowl of khao soi noodles. Along with any bowl of khao soi, you ll also be served some pickled mustard greens and slices of red onions on the side. I havne t come close to trying every bowl of khao soi (ข้าวซอย) available in Chiang Mai, but out of the bowls of the dish that I ve tried so far, I can say quite confidently Khao Soi Khun Yai (ข้าวซอยคุณยาย), serves the best khao soi I ve ever had in Chiang Mai. If you love this Thai dish and are looking for an authentic, spiced to perfection version, you must include this wonderful restaurant on your itinerary. If you re looking for marvelous hand-made soba noodles in Tokyo go to Narutomi (手打ち蕎麦 成冨): http://migrationology.com/2014/06/narutomi-soba-restaurant-tokyo/ I had eaten Japanese soba noodles quite a few times in my life, normally from Japanese buffets or at cheap restaurants outside of Japanese. But along with eating platters of fresh sashimi and bowl of ramen, one of the things I wanted to do when I was in Tokyo was eat a read hand-made meal of soba noodles. As a recommendation from Yukari, a friend of mine, we decided to go to a restaurant known as Narutomi Soba (手打ち蕎麦 成冨) in Tokyo, Japan to sample their soba noodles, and I was thrilled. We got there for lunch, a little before they were open, and we were the first ones in the door. The menu was all in Japanese, so it was a little difficult to explain what I wanted to eat. However, at Narutomi Soba (手打ち蕎麦 成冨) they really only specialize in soba noodles, but they do serve them in a number of different way. The waitress was very kind to us, sat us down, and despite no English being on the menu, she explained to us what we could order. I knew I wanted to get the dry version, known as seiro soba or mori soba (盛り蕎麦), and so we each got one of those. At Narutomi, they also specialize in traditional style tempura, and I accidentally ordered three plates, which made my bill a bit on the expensive side, but it was so worth it. Anyway, our mori soba / mori soba (盛り蕎麦) arrived to our table within a few moments, fresh from the kitchen where the chefs had hand prepared them with extreme care. The soba noodles were presented beautifully on nicely decorated plates and with bowls and cups that our waitress explained originated from the Edo period of Tokyo s history. Everything was beautiful. Since I didn t know the exact proper method of eating the soba, our kind waitress at Narutomi (手打ち蕎麦 成冨) said we should first add the bit of wasabi to the dipping sauce, mix it up, and then dip our soba noodles into the sauce before eating. The noodles were absolutely amazing, cold and refreshing, and they were cooked all the way through, but still had some chewy texture to them. I could actually taste the passion in them, they were so delicate and so amazingly tasty, despite being quite plain, if that makes sense. The tempura made the perfect accompaniment for our soba noodles, and I actually accidentally ordered (I didn t really know they were so expensive when I ordered them) three plates of tempura - two scallop plate and one extra vegetable. The tempura was served in the old style, with a little plate of dipping salt instead of with the common modern dipping sauce. Again, it was extremely simple, but so good and so fresh. The vegetables were all good, but nothing compared to the giant scallop which was deep fried and meaty and sweet. It was absolutely stunning. Though Narutomi Soba (手打ち蕎麦 成冨) was a little on the expensive side for lunch, I thought the food was unbelievably good and extremely high quality. Both the soba and tempura were so simple and plain, yet the care and precision of each dish is what made it shine. I can hoestly say this was one of the most simple yet most amazing meals I ve had in a very long time. If you go to Tokyo and are looking for one of the best restaurants in the city to eat soba, make sure you check out Narutomi Soba (手打ち蕎麦 成冨).
