Have you ever heard of jangtteok (장떡)? They re pancakes seasoned with Korean jang like ganjang (soy sauce), doenjang (soybean paste), or gochujang (hot pepper paste). They make great side dishes for rice and are a popular choice in Korean lunchboxes. I use kale in this recipe but you can use chopped Asian chives, perilla leaves, or green chili peppers. And my version is vegetarian, but you could also add some chopped seafood like shrimp, squid, or clams. It s a very versatile Korean dish, and deliciously savory, earthy, hot, and crispy! Adjust seasoning to taste, and texture to preference, by adding milk if necessary. Spiralize zucchini. I use about 1 zucchini per serving. You can eat zucchini raw OR I prefer to blanch it in hot water for 1-2 minutes. (This sauce can of course also be used over normal pasta and still significantly lightens the dish!) Heat in a pot over low heat to warm before coating pasta! Coat pasta, top with optional peas, devour! Durian is one of the most unique, fascinating, and delicious fruits in the world. Here s the full durian article: http://wp.me/psd9b-4U0 Durian is a fruit that s native and extremely common throughout parts of Southeast Asia, especially Thailand, Malaysia, Indonesia, and the Philippines. The durian fruit has received a bit of a bad reputation as many people on television have mentioned how bad it smells and even how bad it tastes... but I m here to tell you, durian is the most amazing, unique, and I think it s one of the most delicious fruits in the world. I ve been living in Southeast Asia, mostly in Bangkok, Thailand, since 2009, and since that time I ve gotten to eat my fair share of durian fruit, most times being a sensational experience. I remember my first time to taste durian, I was in Kuala Lumpur, Malaysia with a friend, and I could smell the fruit, and then we saw a truck selling durian. I was so excited I could hardly contain myself, something I had heard so many things about, I was about to try. My first bite was incredible, literally one of the most memorable bites of anything I ve ever had, a cacophony of sweet cream. Lindsay from YearoftheDurian.com (http://www.yearofthedurian.com/) is one of the most passionate durian lovers I know, so when she invited me to a Nonthaburi (นนทบุรี) durian farm, known as Suan Toorien Padoi (สวนทุเรียนป้าต้อย), just outside of Bangkok in Thailand, I was pretty excited to go along. Nonthaburi (นนทบุรี) is extremely well known for their durian, and they grow what is considered the most expensive durian in the world, the Nonthaburi Kanyao (ก้านยาว นนทบุรี), a variety with a long stem. Lindsay was on a mission to get her hands on the most expensive durian in the world, I was happy to come along. We went out to the farm, and first walked around the farm. The durian far was really awesome, and all the durian trees were extremely well manicured and taken care of. In Nonthaburi, the durians are so famous and so high quality mostly due to the great quality of soil that is produced in the area. It s close to the Chao Phraya river, which has just the right amount of salinity in it, mixed with just the right amount of minerals to make it the perfect durian growing environment. Lindsay purchased a Nonthaburi kanyao durian (ก้านยาว นนทบุรี), but unfortunately, it wasn t quite ripe to eat then, so we also got a Nonthaburi monthong (หมอนทอง นนทบุรี), another type of a durian, to eat right there on spot. How does durian tastes? There are many ways a durian can taste, but this particular durian was sweet like honey, and had a beautiful creamy texture to it. It wasn t too heavy or bitter, but was just like sweet pudding. I tend to like my durian a little bit more on the bitter side, so it has a nice little bit to it, but I would have to say that this durian we ate, was quite amazing. One of the best things about eating a durian straight from this farm in Thailand, was that it was a 100% organic durian - and I could honestly taste the difference in freshness of the fruit. It was so pure, so buttery and so fantastic tasting. Durian is known as the king of fruits, and mangosteen is often referred to as the queen of fruits. When you eat durian in Thailand, they always say that it s a warming fruit, and it does actually warm up your body in a similar way alcohol does. In the opposite way, mangosteen is said to cool your body, so that s why both fruits are often consumed together. I m not so sure of the effectiveness of this, but I do think durian and mangostee do go very well together. The mangosteen, picked straight off the tree at Suan Toorien Padoi (สวนทุเรียนป้าต้อย), was amazing. Again, it was such a pure taste, so milky and sweet. Visiting the Suan Toorien Padoi (สวนทุเรียนป้าต้อย) durian farm in Thailand was a great experience. As a lover of durian, it was so nice to be able to enjoy a durian, picked straight from the tree, and nice and fresh. Also, I really appreciated and could taste the quality of the durian we ate. SP Chicken (SP ไก่ย่าง) is a nice restaurant that serves Isan food in Chiang Mai, Thailand. Here s the full review: http://www.eatingthaifood.com/2014/06/sp-chicken-chiang-mai/ On our last trip to Chiang Mai, Thailand, along with trying to eat and discover as much khao soi as possible, we headed one day for lunch to a restaurant known as SP Chicken (SP ไก่ย่าง) - they specialize in Thai style grilled chicken, actually more rotisserie style, and the full range of different Thai Isan dishes like som tam and sticky rice. The restaurant is small and family run, and located right in the old section of Chiang Mai, within the gates. The first thing you notice when you enter SP Chicken (SP ไก่ย่าง) restaurant in Chiang Mai is the beauty of their grilling chicken rotisserie. It s a one of a kind, stand up grill, where to coals are situated on the side, and the chicken are skewered and roast while spinning. There s a man, who full times watching the chicken, and occasionally brushes off any ash that may have blown on the birds - the quality control is fantastic. I could smell the chicken, and as soon as we walked in, I was ready to devour a chicken and some Thai green papaya salad to go with it. If you go to this restaurant in Chiang Mai, you should immediately order a full chicken gai yang (ไก่ย่าง), they are pretty small. So small in fact, that at the beginning, I actually smiled because the entire chicken could fit on a normal small sized plate. But I shouldn t have judged the chicken that fast, because after taking my first bite, I realized just how packed with flavor the chicken was. I literally ate the entire drumstick in one bite, and it was just incredibly juicy and oily and packed with tastiness. In addition to the expertly cooked chicken, what I really loved about SP Chicken (SP ไก่ย่าง) was their home-made nam jim jaew (น้ำจิ้มแจ่ว), the sauce used for dipping the chicken in. Along with gai yang, we also ordered a plate of yam dab wan moo (ยำตับหวานหมู), a salad made from liver, dressed in toasted sticky rice, and a blend of fish sauce and lime juice. It was excellent, the liver was nice and tender and I loved the fresh herbs like mint and cilantro. An Isan meal is never complete without an order of green papaya salad. We got som tam boo (ส้มตำปู), green papaya salad with crab. It was excellent, mainly because I loved the good amount of lime juice that they used in it. Gai pad prik gaeng (วิธีทำ ไก่ผัดพริกแกง), or chicken fried with red curry paste, is one of my favorite Thai street food recipes. Here s the full recipe: http://wp.me/p4a4F7-2ua There are many amazing Thai street food dishes to eat and to cook, but one of my personal go-to dishes is something known as gai pad prik gaeng (วิธีทำ ไก่ผัดพริกแกง), a stir fry of chicken and red curry paste. It s one of my personal favorites, and I like to think of it as a dry curry, or a curry where all the flavor is caked onto the meat. You could make this gai pad prik gaeng recipe with any kind of meat of your choice, my favorites are with chicken, shrimp, or squid, but even beef or pork would work just fine too. The main component of this Thai chicken fried with red curry paste recipe (วิธีทำ ไก่ผัดพริกแกง gai pad prik gaeng), is the Thai red curry paste. That s really what gives the entire dish its flavor, and that s really one of the only things you need besides the chicken, in order to make this dish. For the full recipe for Thai red curry paste, check out this video: http://youtu.be/8o6KqwnSpWE You could also buy Thai red curry paste in a can or in a tub, but let me tell you that it s so much better when you make it fresh - freshly pounding all the ingredients yourself makes all the difference in flavor when you make this Thai recipe - so if you can, make your red curry paste fresh. Ok, so here are the ingredients you ll need to make this gai pad prik gaeng recipe (วิธีทำ ไก่ผัดพริกแกง): 300 grams , or about 1.5 chicken breasts 3 strands of Chinese long beans (or about ⅓ cup of chopped string beans) 3 - 5 kaffir lime leaves 3 tablespoons Thai red curry paste (recipe here: http://www.eatingthaifood.com/2014/06/thai-red-curry-paste-recipe/) 1 teaspoon fish sauce ½ teaspoon sugar 1 tablespoon oil for frying Again, this Thai recipe is really simple to make, as long as you have some Thai red curry paste available. Then all you have to do is slice up your meat, and stir fry everything up, and you ll have an extremely tasty Thai stir fried curry dish. Along with the chicken and the red curry paste, one of the most important ingredients in my opinion is kaffir lime leaves. It s not an absolute must that you need to include them, but it really adds an extra dimension of wonderful flavor if you tear in some kaffir limes leaves into your gai pad prik gaeng. The kaffir limes leaves give the entire dish a nice lime refreshing boost of flavor. I like to eat my gai pad prik gaeng (ไก่ผัดพริกแกง) with a fresh plate of steamed rice, and often a fried egg on the side.
