Thai tom yum goong (ต้มยำกุ้ง) is one of the most widely available and loved dishes in Thailand. Check out my full Thai tom yum soup recipe here: http://wp.me/p4a4F7-2uc At nearly every Thai restaurant you go to, both in Thailand and outside of Thailand, there will be some form of tom yum on the menu. Tom yum is really like a mix of different ingredients, all boiled together into a soup, and flavored with a trio of Thai herbs: lemongrass, galangal, and kaffir lime leaves. Without this trio of herbs, tom yum (ต้มยำ) would not have that earthy undertone of herb flavor to it. Sure the other ingredients, like chilies, shrimp, onions, garlic, fish sauce, and lime juice are also essential in this recipe, but without the trio of herbs, you wouldn t have an authentic version of this soup. So anyway, it’s actually quite easy to make this Thai tom yum soup recipe as long as you have all the ingredients available. I was in the United States a few months ago, and I was able to find all the ingredients at the local Asian supermarkets - so hopefully you should have any trouble finding them either. If you’ve eaten Thai tom yum soup before, you might already know that there are two different versions of the dish - there’s a creamy version, which in Thai is known as tom yum goong nam khon (ต้มยำกุ้งน้ำข้น) and there a clear version which is known as Tom yum goong nam sai (ต้มยำกุ้งน้ำใส). Both types of soup are equally common in Thailand, and they are both loved throughout the country. The creamy version of the soup, doesn’t use coconut milk to make it creamy, but rather evaporated milk is what gives it that creaminess. You can try both versions of this recipe to see which one you prefer. Overall, I personally prefer the clear version, partly because it’s less rich, and I also like that the sourness and spiciness of the clear soup is usually stronger. Milk tends to mellow out the flavors and calm them down. However, I like both versions of tom yum, and you should try them both. I’m using shrimp in this recipe, making tom yum goong (ต้มยำกุ้ง), but you can substitute shrimp for something else, like chicken or fish. I also really love tom yum made with fish as it gives the soup a beautiful oily fish flavor to it. One of the things I love about making Thai tom yum soup is that it doesn’t take very long to prepare. If you have all your ingredients available, all you have to do is slice everything up, put on your pot of boiling water, let the ingredients cook, and once your shrimp and other ingredients are done, the soup is done. Probably the most important time I can give you for this Thai tom yum soup recipe is to turn off the heat of the soup before you add your lime juice. Lime juice gets bitter and loses its sourness on too high of a heat, so you have to turn off your heat and then add your lime juice for your final step. Ingredients used in this recipe: 2 liters of water 4 stalks of lemongrass 1 inch chunk of galangal 10 kaffir lime leaves 10 Thai chilies 5 cloves of garlic ½ kilo shrimp 300 grams of oyster mushrooms 2 roma tomatoes 2 white onions (medium sized) 2 teaspoons of sugar 8 - 12 tablespoons of fish sauce (depending on your taste) 8 - 12 tablespoons of lime juice (10 - 15 limes) Handful of cilantro Creamy tom yum version 3 tablespoons canned Thai roasted chili sauce (nam prik pao น้ำพริกเผา) 10 tablespoons evaporated milk Taste test, you may need to add more lime juice or fish sauce as the milk and roasted chili sauce throws off the sourness and saltiness. Sai ua is a seriously tasty northern Thai sausage. Get more details about this place here: http://www.eatingthaifood.com/2014/08/sai-ua-chiang-mai-sausage/ Sai ua (ไส้อั่ว) is northern Thai sausage, and one of the serious gems of northern Lanna cuisine - it’s something I really look forward to eating when I take a trip to the north of Thailand. The sausage is famous especially in Chiang Mai and Chiang Rai. Sai ua (ไส้อั่ว) is much more than just a sausage, it’s an herb infused, spicy sauce, that’s absolutely packed with flavor and fragrance. In Chiang Mai, you’ll find tons of vendors selling sai ua (ไส้อั่ว), everyone with their slightly own unique recipe. The basic ingredients that go into the sausage are ground pork, lemongrass, galangal, kaffir lime leaves, chilies, and then a handful of other dry seasoning and spices. I’ve had quite a few different version in Chiang Mai, some of them are more fatty and more porky, while others are more herb filled and spicy. It all sort of depends on your personal preference which version you like and for myself it sort of depends on the mood I’m in. Most of the time I tend to prefer the herb filled version of sai ua (ไส้อั่ว). Where should I get sai ua (ไส้อั่ว) in Chiang Mai? There are many places scattered throughout Chiang Mai that are extremely famous for making delicious sausage. It’s available at street food stands, at markets, and often at northern Thai restaurants as well. In Thailand, if you’re from Bangkok and you visit Chiang Mai, you cannot return home without bringing some northern Thai sausage with you; You family would not be happy. Warorot Market, located in the center of Chiang Mai is a famous place that many people go to buy their supply of sai ua. But there’s another famous, maybe a little more local of a market, called Ton Payom Market (ตลาดต้นพยอม) that is also known for its many sai ua (ไส้อั่ว) vendors. I think there were about ten different places to choose from, so after some contemplation we just had to choose a place. We chose Sai Ua La Wan (ร้านไส้อั่วลาวัลย์). You’ll know there’s sai ua (ไส้อั่ว) available when you notice a big coil of meat sitting on the table. They normally have it ready to go, you buy by the kilo, and then they’ll wrap it up and prepare it for you to take away. There are other places where they heat it up for you to eat right there, but at this place it was more of a takeaway spot. The sausage at Sai Ua La Wan (ร้านไส้อั่วลาวัลย์) was sort of inbetween the really herb filled version and the meaty kind. It had good meatiness to it, but it was also nice and spice filled. I thought it was quite a good balance. I probably prefer the more heavily herb flavored versions, but I still thought the sai ua (ไส้อั่ว) at Sai Ua La Wan (ร้านไส้อั่วลาวัลย์) was good. If you’re ever in Chiang Mai, sai ua (ไส้อั่ว) is something you need to try. It’s one of the most flavorful sausages ever. TURKEY STUFFED ZUCCHINI BOAT RECIPE 4 medium zucchini (about 2 pounds) 2 tsp. extra virgin olive oil 1 lb. ground turkey 3 garlic cloves minced 1/2 onion chopped 1/2 green pepper chopped 1/2 cup reserved zucchini meat from the center of zucchini 1 tbsp. Italian seasoning 1 cup strained tomatoes 1/2 cup part skim mozzarella cheese shredded INSTRUCTIONS Bring a large pot of water to a boil and pre-heat oven to 350. Slice zucchini in half length wise and use a spoon (or melon baller) to scoop out the center leaving about 1/4 inch zucchini shell all around (see video for demonstration). Be sure to save the zucchini you scooped out. Place zucchini in the pop of boiling for one minute. They go in and out. Heat olive oil in a large skillet over medium-high heat before adding in ground turkey. Using a wooden spoon or spatula to break the meat into smaller pieces and cook until lightly browned. Add in garlic, onion, green peppers, zucchini meat, Italian seasoning, strained tomatoes, salt, and pepper. Mix everything together and simmer for about 15 minutes or until the veggies are tender and all the flavors have come together. Place zucchini halves in a baking dish and fill each zucchini boat with about 1/2 cup filling. Top each turkey stuffed zucchini boat with 1 tbsp. shredded mozzarella cheese. Cover with aluminum foil and bake for 30 minutes or until the cheese has melted and everything has heated through. Enjoy!
