Pat Radna Moo Noom (พัฒน์ ราดหน้าหมูนุ่ม) might look just like an ordinary Thai Chinese restaurant for the outside, but it’s actually quite a gem of a restaurant. All details here - http://www.eatingthaifood.com/2014/09/pat-radna-restaurant-bang-kapi-bangkok/ Pat Radna Moo Noom (พัฒน์ ราดหน้าหมูนุ่ม) is a restaurant in the Bang Kapi area of Bangkok, about 30 minutes or so from the center of the city. It’s an area I don’t know too well, but an area that’s full of wonderful local restaurants to be explored. One day, Ying and I were in the area, and we were hungry for lunch, so Ying had heard of this place, and we went to check it out. Pat Radna Moo Noom (พัฒน์ ราดหน้าหมูนุ่ม) is just a local neighborhood, sort of hole in the wall restaurant, that specializes in Thai Chinese food. But they don t’ just serve typical Thai Chinese food, they serve some really unique dishes, things I had never seen before on Thai menu, especially a Thai street food menu like this. The first dish we ordered was khao pad kana bao heua (ข้าวผัดคะน้าเป๋าฮื้อ), Thai fried rice, stir fried with Chinese broccoli and what I think was abalone. This was the first dish I tried, and it actually proved to probably be my favorite dish of the meal as well. The rice was fried on an incredibly hot fire, so I could taste the slight burnt charred flavor. There was egg in it and also that beautiful broccoli and abalone. But the most interesting part of the fried rice, was that they had mixed in raw little dices of cucumber, which gave the entire dish a nice crunch and a freshness to it. We also ordered radna pla dao si (ราดหน้าปลาเต้าซี่). Radna is a common Thai dish, made with wide rice noodles, covered in a thick gravy sauce usually made from pork and Chinese broccoli. Their version did use wide rice noodles, but the sauce was made from black bean sauce, and had pieces of fried fish in it, and also some small vegetables. It was very good, and with a splash of chili vinegar, it was even better. Pla pad keun chai (ปลาผัดคึ่นฉ่าย), fish stir fried with celery, is a dish I often enjoy eating, especially when I go to any Thai Chinese restaurant. They didn’t disappoint at Pat Radna Moo Noom (พัฒน์ ราดหน้าหมูนุ่ม), the fish was fried and crispy, and it was stir fried with plenty of baby celery, ginger, and chilies - great flavor and nice dish. And the final dish we ordered, something I had never before eaten in Thailand, especially at a street food restaurant like this, was nguong kway goong (โหวงก๊วยกุ้ง), a stir fry combination of shrimp, gingko nuts, jujube Chinese dates, and cashew nuts, all fried in a glaze of what I think was oyster sauce and soy sauce. It was a very interesting combo, but it was quite tasty. Overall, a very good lunch, and I especially loved that abalone fried rice. Preheat oven to 300° F. (150° C.) 2. In a bowl add in water, warm espresso, and warm melted unsalted butter. Mix well. Then stir in confectioners sugar. Finally sift in all-purpose flour. Whisk until homogeneous. The batter will be very liquidy. Let chill in the refrigerator for one hour. 3. On a silpat, or a greased pan, make disks with a teaspoon of batter. Spread the batter flat with the back of the teaspoon. 4. Bake for 10 to 12 minutes, or until dry and set. 5. Out of oven, immediately transfer the disks to a rolling pin. Peel onion and cut into rings. Separate rings and drop into batter and toss. Heat oil on medium flame and fry rings for 3 minutes then flip. Once golden brown remove and drain on a paper towel. Drizzle with spicy Sriracha Mayo and garnish with chopped scallions. Serve with dip (blue cheese, ranch etc). Peach Ring Pancakes Ingredients 1 Peach Pancake Batter Pat of butter or Cooking spray Syrup Whipped Cream 1 Peach cut in half and sliced into rings. Spray pan with cooking spray or melt a pat of butter. Pour pancake batter to fit peach ring. Once you see bubbles forming on the pancake add the peach ring and flip. Caramelize the peach side. Remove and stack. Drizzle with maple syrup and top with whipped cream! Apple Funnel Cake Ingredients 1 Apple Pancake Batter Lemon Juice 2 Tablespoons Brown Sugar 1 Teaspoon Cinnamon - Chop apple into chunks or dice and throw into a pan. Add brown sugar, cinnamon and juice of half a lemon, caramelize and remove from heat. In another pan heat up oil. Once oil is hot drizzle pancake batter into oil to from funnel cake. Flip till golden brown. Remove and cut into circles. Add apples then stack with another layer of funnel cake (build as much as you want). Top with powdered sugar and dig in. Buffalo Chicken Bites Ingredients Chicken Breast Pancake Batter 1 Teaspoon Paprika 1 Teaspoon Cumin Butter Hot Sauce Sesame Seeds - Pour batter into bowl and add paprika and cumin, mix. Take chicken breasts and cut into bite size pieces and tenderize. Add bite size chicken pieces into batter and mix. In a pan shallow fry chicken till dark brown and remove from heat. In a pan melt a pat of butter and add splashes of hot sauce, let it reduce. Then add chicken and toss till coated in buffalo sauce. Toss with sesame seeds and garnish with scallions! Bacon, Egg, and Cheese Ingredients Pancake Batter Bacon Egg Cheese - First make a ring out of tin foil this will hold the shape of your egg and pancake (you can also use a mason jar lid, just make sure you spray it so nothing sticks!). Cut you bacon strips in half and cook to your choice of crispness! Then crack and egg into ring mold and once it starts to set scramble the yolk, and flip then cook and remove. In the same ring mold pour your pancake batter inside. Let it brown on one side then flip and brown again. Cut cheese slice into a circular shape. Wattana Panich (วัฒนาพานิช-ก๋วยเตี๋ยวเนื้อ) is one of the most famous restaurants for Thai beef noodles in Bangkok. More details here: http://www.eatingthaifood.com/2014/09/thai-beef-noodles-wattana-panich-ekkamai/ A few years ago I made a video about Thai beef noodles, at a little restaurant in the Udom Suk area of Bangkok. The beef noodles there were extremely good, but someone commented saying I needed to try the beef noodles on Ekkamai Soi 18. I put it on my list, but just didn’t have the time to go there for a long time. But finally, after a long wait, I finally made my way to the famous Wattana Panich (วัฒนาพานิช-ก๋วยเตี๋ยวเนื้อ) restaurant to taste the beef noodles - and I was excited. I was even more thrilled when we arrived, and I peered into the most beautiful cauldron of slow simmering beef, like a jacuzzi of meat, that greeted me as I entered. Their pan of slow bubbling beef was one of the most amazing food things I had seen in a very long time, and I could hardly wait to order a bowl of beef noodles (ก๋วยเตี๋ยวเนื้อเปื่อยเส้นเล็ก). But along with beef, Wattana Panich (วัฒนาพานิช-ก๋วยเตี๋ยวเนื้อ) also is famous for their braised goat noodles - so any chance I get to order goat, I can’t resist. The kuay teow neua (beef noodles) came out first, and I ordered the special size, meaning it was a little bigger, and with a little more beef than the normal bowl. For the noodles I ordered sen lek, the medium sized rice noodles, and my usual preferred choice when it comes to noodles. The noodles were swimming in that beautiful broth, and then covered in a good spoonful of the amazing tender cubes of beef, and finally garnished with a few sprigs of cilantro (coriander). I tasted the beef noodles first, and the broth was a beautiful concoction of beef braised with a hint of spices like star anise and cinnamon. The beef was so tender and had so much beefy flavor to it. I loved it plain, but it even got better when I added some extra chili flakes and a scoop of vinegar to sour things up. It was one of the best bowls of beef noodles (ก๋วยเตี๋ยวเนื้อเปื่อยเส้นเล็ก) I’ve had in a long time in Bangkok. And then the goat noodles (kuay teow pae sen lek ก๋วยเตี๋ยวแพะเส้นเล็ก) emerged from the kitchen, the goat is cooked behind the scenes, not visible in the front part of the kitchen. It came in a smaller bowl, but the chunks of goat on the top of the bowl were so huge, I could hardly even see the noodles at the bottom. The goat was braised similar to the beef, I think. It was in a similar blend of Chinese spices, but included even more Chinese herbal medicine spices like red goji berries and astragalus root. The broth was much thicker than the beef noodles, so it was more of a stew than a soup, and that was fine by me. The goat meat was unbelievably tender, so soft that it completely melted in my mouth and I barely had to chew. The broth was calm and soothing, and extremely meaty tasting. If you love Thai beef noodles or goat noodles, when you’re in Bangkok, you need to make it a mission to visit Wattana Panich (วัฒนาพานิช-ก๋วยเตี๋ยวเนื้อ). Both dishes were amazing and so meaty. I loved it. You can take the BTS Skytrain to Ekkamai, and from there, it’s easiest to jump in a taxi, bus, or motorbike to Soi 18. You could walk, but it’s a bit far, maybe 2 - 3 kilometers. One of the most beloved dishes in Myanmar is lahpet thoke, or pickled tea leaf salad. Read my full post here: http://migrationology.com/2014/09/lahpet-thoke-myanmar-tea-leaf-salad/ The northern part of Myanmar is an area where tea originated - so it’s no wonder that tea plays a major part in the social culture of the country. But most of the time when you think about tea, you think of it only as a beverage, something to drink - and throughout most of the world, this is true. But in Myanmar, one of the most famous things to eat is actually tea, known as lahpet. Laphet thoke is a very common dish throughout Myanmar, and the base and most important ingredient are pickled tea leaves. The leaves are mixed with tomatoes, and a few different other ingredients like toasted peas and nuts, and then mixed with a dressing made from peanut oil and a few seasoning light spices. The salad is extremely delicious, and the pickled tea leaves have a unique, slightly bitter, and slightly sour component to them, with a nice chewy texture. Laphet thoke makes a wonderful snack when you’re drinking tea too - so drinking tea and eating tea at the same time is delicious! In Yangon you’ll be able to find laphet thoke, and it’s popular to eat at small street-side stands, but that being said, not all tea stalls serve it. You have to look for a stall that has a number of plastic tubs at the front, filled with all the ingredients used to prepare the tea leaf salad. If you see the plastic tubs, you’ll known they served lahpet thoke. Sit down on one of the miniature Myanmar plastic stools, order it, and you can sit and sip on tea while you wait for your salad to be mixed up. When we made this video, I was in Yangon during the monsoon rainy season. It wasn’t raining when we sat down to eat, while I was eating, the rain all of a sudden started pouring down, and soon we had a small river flowing right through the street food stall - so we actually had to get up and stand so we wouldn’t float away! That’s part of the fun and excitement of eating street food in Myanmar. Along with the tea leaf salad, lahpet thoke, we also ordered a plate of gyin thoke, pickled ginger salad - another delicious salad especially if you love ginger.
