How cool is this?! Simple, healthy and looks awesome! A delicious combo of spaghetti squash, chicken, spinach, garlic, basil, roasted spaghetti squash seeds and goat cheese! Watch how easy it is to make this delicious spaghetti squash bowl. And, if only 1 or 2 people are eating, save the other half for leftovers, because then it s much faster to make if the squash is already prepared. Just throw in some protein and veggies and you have a totally different squash bowl!! 1 spaghetti squash 2 chicken breast 1 tbls olive oil 2 cloves crushed garlic 1/2 tsp salt and pepper 8 oz spinach 2 oz fresh basil 1 oz goat cheese (optional) ** If you are on the ISA 30 day, you can substitute the goat cheese for feta cheese! Or just omit! ** 1. Cut your squash in half. Scrape out the seeds and place in a bowl. Place flesh side down in a tray with a half inch of water and roast in a 375 degree oven for 30 minutes. Toss the seeds with a drizzle of olive oil and pinch of salt. Place on a baking sheet on tin foil and roast for 20 minutes. 2. Cut the chicken breast into bite sized pieces. In a wok, saute the garlic in some olive oil. Add the chicken, salt and pepper. Saute on medium heat for 5 minutes until the chicken is mostly white. 3. When the squash comes out of the oven, you should be able to easily stick a fork in the skin. If not, place back in your oven for a few more minutes. Once ready, set aside to cool. 4. Add the spinach to the chicken. Mix together and leave the heat on low. 5. Now that the squash has cooled off, you can hold it and using a fork, scrape out the flesh into a bowl. Toss the "spaghetti" with some olive oil, salt and pepper. Add the spaghetti to the chicken and spinach. Add the fresh basil and mix together. Place in the skin of the squash and garnish with the seeds and some cheese! Thai fried fish with garlic and turmeric, known as pla tod kamin (ปลาทอดขมิ้น) in Thai, is one of my favorite ways to eat fried fish. Read the full recipe now: http://www.eatingthaifood.com/2014/10/recipe-thai-fried-fish-garlic-turmeric/ Ying and her family are from the south of Thailand, so when I’m at home, with her family, we tend to eat mainly southern Thai food - as that’s predominantly what her mom cooks. Anyway, that’s totally fine by me, because I’m a lover of all food from the south of Thailand. One of the dishes that my mother in law frequently makes is called pla tod kamin (ปลาทอดขมิ้น), which is basically a Thai deep fried fish with turmeric and garlic, and I think it happens to be one of the best ways ever to cook and to eat a deep fried fish. You’ll find this Thai dish in Bangkok at southern Thai restaurants and throughout the south of Thailand. This is actually a pretty simple recipes, and even when I was visiting the United States, I was able to find all the ingredients for this (although I made this recipe in Bangkok). Ok, here are the ingredients you’ll need for this spectacular Thai dish: Fish - and I used 2 small fish which equally out to about 1 kilo together. I used a fish called pla daeng in Thai (ปลาแดง), which is an ornate threadfrin bream. It’s a good fish because it’s small enough to fry easily, and once it’s finished cooking, the fish remains nice and firm. But you could also use another fish like a tilapia or mackerel can both be used. Salt - a few pinches of salt to season the fish before frying them Garlic - 250 grams of garlic (กระเทียม), and for me that came to 7 full heads of garlic Turmeric - 150 grams fresh turmeric (ขมิ้น) rhizome, which was a nice handful Oil - enough oil for frying, I think I used about 1 liter, but depending on the size of your wok or pan may determine how much oil you’ll need to use. Be sure to view the full recipe here http://www.eatingthaifood.com/2014/10/recipe-thai-fried-fish-garlic-turmeric/ but I’ll quickly recap the steps for making pla tod kamin (ปลาทอดขมิ้น) here: The first thing to do is peel your garlic, and then take your fresh turmeric and chop it up into small pieces. In Thailand most people use a mortar and pestle to then pound the turmeric and garlic. But alternatively if you don’t have a Thai mortar and pestle, you could also use a blender or a food processor. One thing to note is that you don’t want the mixture too fine, it’s not like a curry paste, you just want to break it down and release their oils. The fish should be de-scaled and gutted already, then just sprinkle a little salt on them. Then take the turmeric garlic mixture and rub it all over the fish. Then go ahead and put your oil into the wok and start to heat your oil. Once the oil is hot, you can slide in the fish (only the fish, not the garlic and turmeric yet). It should take about 5 - 8 minutes to deep fry on each side of the fish. You want to gently keep and eye on it, and remember to use your spatula to scrape the bottom of the pan to make sure it doesn’t stick to the pan. Once your fish is all the way golden and cooked through, take it out and drain it. Now go back to your garlic and turmeric, and deep fry that for about 10 minutes or so, until it becomes golden and crispy. You want to continually mix it, so it doesn’t stick or clump. That’s about it for this southern Thai recipe for fried fish with garlic and turmeric (วิธีทำปลาทอดขมิ้น). Like I mentioned in the video, this is honestly one of my favorite ways to eat fried fish, I think the garlic and the turmeric enhance the fish so incredibly well, and with a fresh plate of hot rice it’s hard to beat. Set aside. In a small bowl, whisk together extra virgin olive oil, tahini, balsamic vinegar, crushed garlic and salt and pepper. Pour dressing over the kale leaves and gently massage into kale until all of the leaves have a nice light coating of the dressing. Spread kale leaves out on mesh cooking sheets, being sure that the leaves do not overlap. Place the sheets in the dehydrator and set at 135 degrees Fahrenheit for four hours on raw mode. When the leaves are done (dry and crunchy) store them in an airtight container for up to 1 week. Enjoy! This is a one pot, super healthy and dangerously delicious vegetable soup recipe. Lots of protein from the beans and the quinoa. Easy to make and eat throughout the week, or freeze for later. The best part about this soup is it s easily changeable. Don t like mushrooms? Don t add them! I added my favorite vegetables, mushrooms, kale and squash. Enjoy this wonderful soup on a chilly fall evening! Very simple to make, and really, you don’t need a recipe. I would say, with the ingredients I used, there are a good 8-10 servings in the pot. Won’t cost you very much, very filling, one pot, and it’s perfect for leftovers or freeze for another week! If you don’t like an ingredient, don’t add it! If you love one of them more than another, add more of that one! It would be lovely to snuggle up on the couch on a chilly fall night, with this bowl of healthy goodness. Try it out! I think you’ll be quite pleased. Easy Veggie Soup Ingredients: 1 tbl olive oil 5-10 cloves crushed garlic 8 oz sliced mushrooms 2 medium sized zucchini 1/2 tsp salt/pepper 1 head of kale 1 lb 13 oz can white beans 32 oz vegetable broth 1/2 cup quinoa 1 1/2 cups water 2-3 tomatoes basil (optional) How to Make this Veggie Soup: Heat the olive oil and sauté the garlic in a large soup pot. Add the mushrooms. If someone isn’t a fan of mushrooms, either don’t add them, or cut them smaller!! (Totally did that with my mom, she ate her whole bowl and didn’t taste them 😉 I love mushrooms and she hates them!) Stir and leave on low heat. Cut the zucchinis in half lengthwise, then make small slices. Add to your pot. Add the salt and pepper. Stir and cook on medium heat for 3 minutes. Wash and dry your kale. No one wants to chomp on a giant piece of dirt. You could really hurt your pearly whites!! Rip the kale apart and add to your soup, just make sure you throw away the spine. It’s way too bitter to eat. Stir. Add white beans and vegetable broth. Stir. Add the quinoa and water. Stir and turn the heat up to bring to a boil. While you wait for it to boil, cut up your tomatoes. Don’t make the pieces too small, or they will disappear into your soup! Once boiling, turn heat to low and add in your tomatoes. Don’t splash yourself!! Stir and cover. In 20 minutes, it’s ready to eat! You can prepare this long before you’re going to eat it. But if you do that, just wait to add the quinoa and tomato. Add those in 20 minutes before you’re ready to eat. If you would rather the soup have more quinoa, add 1 cup of quinoa and 2 cups of water. I did that the first time, but the quinoa kind of took over, so I used less when I made the video. Your choice! If you aren’t a vegetarian, you can add some meat to this soup. I bet chicken would be fabulous. When I made it, I added organic ground turkey and it was delicious! Let me know if you add something that you love 🙂

Properly toasted sesame seeds are a very important ingredient in Korean cuisine. They add a wonderful, toasted nuttiness to many Korean dishes, and are particularly important in giving vegetarian dishes an extra dimension of flavor. Other cultures use sesame seeds in their cooking but to me, properly toasted sesame seeds are part of what make Korean food distinctly Korean. When Koreans refer to sesame seeds, the fact that they are toasted is understood by all - no Korean would even consider using raw or untoasted sesame seeds in any dish. We love toasted sesame seeds. I take my toasted sesame seeds seriously! I always have some on hand. I toast a few cups at a time and store them in the freezer, and take some out little by little over the next few months until I have to toast some more. And when I travel, I always bring a little stash with me for cooking on the road or livening up a dish. I ve also given toasted sesame seeds as gifts! For me, that s a great present! When you buy sesame seeds to toast, get raw sesame seeds, called cham-kkae in Korean. If you can t find these, you can buy pre-roasted sesame seeds, called bokkeun-kkae or bokkeum-kkae in Korean in the store. Bokkeum or bokkeun means "toasted." If you buy toasted (or roasted) sesame seeds in the store, it s always a good idea to toast them again before using them to give them a boost of nutty flavor, because they might have been toasted a long time ago. As you see, this recipe is very simple, but it s all in the technique. It s best to wash the seeds well, so toasting makes them plump, and take care of them so they don t burn.
