Khua kling (คั่วกลิ้ง) is an extremely common southern Thai dish. In this recipe video, you’ll learn how to make this spicy dry meat curry. Get the full recipe here: http://wp.me/p4a4F7-2Eq Since my wife and her family are from the south of Thailand, I have a huge love for southern Thai cuisine - the strong spices and the flavorsome curries are what I love most about southern Thai cuisine. One of the most widely consumed dishes in the south, and available at all southern Thai restaurant is a dish called khua kling (คั่วกลิ้ง). Khua kling (คั่วกลิ้ง) is a dry curry, and though in this video I make it with pork, you can easily make it with whatever meat you choose, beef is especially delicious. Here are all the ingredients I used in this recipe: 500 g. minced pork or beef, or even any other meat would work too, and you can either use minced meat or thin slices of meat 3 tbsp. southern Thai curry paste 50 g. lemongrass 1 spur chili (should be red) 10 - 15 kaffir lime leaves or more tiny bit of sugar Thai bird chilies for garnish The first step to making khua kling is to get southern Thai curry paste - you can either make it yourself (http://youtu.be/kVldpua3uLA), or you might be able to purchase it in an Asian supermarket - although I’m not sure how the flavor exactly would be. Once you have the curry paste and the meat ready to go, all you need to do is heat up your frying pan and stir fry everything together. Begin with your curry paste, by adding it to a hot pan, and stir fry it, along with 1 spoon of meat, for about 2 - 3 minutes. This is just going to temper all the spices in the paste, and really make them fragrant so they offer the most flavor. Next, add in the rest of the meat, and keep frying on medium heat. It should be dry, and probably some of the meat will begin to stick to the bottom of the pan, but just keep frying it and working it, and scrape all that delicious flavor off the bottom of the pan. Then add in your lemongrass, give it a stir, followed by the thinly shaved kaffir lime leaves, and finally the spur chili. Once you’re dished your khua kling (คั่วกลิ้ง) onto a plate, you can then sprinkle on more finely shaved kaffir limes leaves, and I also like to add some Thai bird chilies. That’s all there is to it. You should have a beautiful plate of southern Thai dry curry. It goes very well with a hot plate of rice and some other southern Thai foods like stink beans and sour soup (gaeng som). We visited one of my favorite local farms, Abma s in Wyckoff NJ and then I got to make one of my favorite weeknight dinners (Turkey+Veggie Chili) with the help of two of my favorite people on the planet (my kids!). And be sure to scroll down if you want the recipe I share in the video. xo 1tbsp. extra virgin olive oil 1 small or ½ large onion, chopped 1 red bell pepper, chopped 3 cloves garlic, chopped 1.25 lb. extra lean ground turkey 1 tbsp. chili powder 1 tsp. ground cumin 1 tsp. oregano 1 can low sodium diced tomatoes 1-15oz. can tri-colored chili beans 3 cups low sodium chicken broth 2 zucchini, quartered and chopped 3 cups fresh chopped kale Salt and pepper to taste Heat oil in a large pot over a medium high heat. Add in onions along with a pinch of salt and sauté for 5 minutes or until they are fragrant. Stir in garlic and peppers and cook for 5 more minutes. Add in turkey, chili powder, cumin, and salt and pepper breaking down the turkey with a spatula until it is in small pieces and coated with all the seasonings. Once the turkey has turned from translucent to opaque add in the beans, tomatoes, and chicken broth and bring to a boil. Once you’ve got your boil add in the zucchini and kale, turn down to a simmer and cook for 5-10 minutes or until the veggies are tender. Serve with your favorite chili toppings. Enjoy! The foundation of cooking Thai food is the curry paste. Here’s the full recipe for southern Thai curry paste: http://wp.me/p4a4F7-2En WARNING: If you make this curry paste, you may want to use a glove. My hand did burn for a few hours afterward making it. Thai curry pastes are used to cook so many different Thai dishes - you’ll find curry pastes used to make curries, stir fry dishes, and soups in Thai cuisine. I think curry pastes are one of my favorites things in the world, mainly because there is so much flavor packed into each and every curry paste. There are many different types of pastes available and used frequently in Thai cuisine, but this is a recipe for the southern style, which is one of my favorites. One of the major distinctions because southern Thai paste and others, is the usage of fresh turmeric which gives everything a beautiful orange color. Let’s quickly go over the ingredients, and then I’ll just briefly explain the cooking process. But be sure to check out the full recipe (link above) to get all the details about how to cook this for yourself. Here are the ingredients that you’ll need: 50 g. dried Thai bird chilies - a big handful 30 g. fresh Thai bird chilies - a smaller handful 50 g. garlic - it came to about 2 whole heads of garlic for me 50 g. turmeric - this is the real southern Thai flavor 50 g. galangal - I used about a 2 inch hunk in this video 25 g. shallots - Thai shallots are quite small from ones I’ve seen elsewhere, so be sure to measure out the amount by weight 5 stalks lemongrass - and like you’ll see in the video, throw away the outer few layers ½ kaffir lime - but only the peel of the lime 2 tbsp. dry peppercorns - I used whole peppercorns, but if you have pre-ground pepper already, that should be fine ½ tbsp. salt 2 tbsp. shrimp paste - this is going to give your Thai curry paste saltiness and super flavor That’s all for the ingredients. For preparing the curry paste, all you really need to do is cut everything into small pieces, and start pounding away. Other than saving the shrimp paste for the very end, you can really add in the ingredients however you like and in whatever order you’d like. I normally like to begin with the dry chilies, as they are the bulkiest of all the ingredients, and then keep on adding as I go along. It could take a while to pound all the ingredients into a paste, for this recipe it took me about 1.5 hours, but you’re looking for a real buttery smooth and oily paste. The reason to pound Thai curry paste by hand with a mortar and pestle is because when you really work the ingredients slowly, they fully release all their oil - which is where all that beautiful flavor resides. If you make southern Thai curry paste with a blender or food processor, the flavors won’t be as complex. But that being said, if you don’t have the time to pound by hand, this recipe will still taste great blended or processed. Everything you need for a guilt-free thanksgiving meal! http://mindovermunch.com/ebooks INGREDIENTS 1 thawed turkey, insides removed 2 onions, quartered 4 celery stalks, roughly chopped 6 adult carrots, roughly chopped 1 tsp salt + 1⁄2 tsp pepper (for presalting) 1⁄3–1⁄2 cup (80–120mL) olive oil (depending on turkey size) 1⁄3 cup (10g) fresh herbs, chopped (I use a mixture of thyme, sage and rosemary) 1⁄2 tsp salt 1⁄2 tsp pepper 1/2 onion + 1/2 apple 3 cups (720mL) chicken/turkey stock 1 cup (240mL) wine/cooking wine ADDITIONAL SUPPLIES roasting pan & rack (rack is optional) baster (optional if you’d like to baste) meat thermometer twine PROCEDURE 1. Preheat oven to 325°F (160°C). 2. Rinse the turkey and pat dry with paper towels. 3. Add onions, celery and carrots to roasting pan and place turkey on top, breast-side up. 4. Presalt by sprinkling salt & pepper all over the bird–front and back–and inside of the cavity. 5. Mix together oil, herbs and salt & pepper. Carefully, use your hands to spread herby oil underneath the skin (try not to pierce through), as well as all over the bird, covering every square inch to ensure beautiful browning and flavor! If you do NOT want to get under the skin with your hands, feel free to skip this step and simply brush the herby oil on with a basting brush. 6. Put your 1⁄2 apple & 1⁄2 onion together and place inside the cavity for moisture. 7. Tie the legs of the turkey together with twine. 8. Pour wine and stock into the bottom of the roasting pan. 9. Bake in the oven 3–4 hours, depending on size. About 15 minutes per pound is a good rule of thumb! 10. After each hour, remove from oven and baste if desired, using the juicy-goodness on the bottom of your roasting pan. 11. Check your meat thermometer after 2 hours by piercing into the lower thigh. Once your bird reaches 175°–180°F (80-82°C) it’s done! 12. Allow to rest 45 minutes before carving. Use your juices in the baking pan for gravy, or discard. Discard the vegetables in the baking pan– they’ve done their job! Nutritional information will differ based on whether or not you are eating white/dark meat, and if you’re eating the skin or not. Below is the nutritional information for white and dark meat without skin. While white meat does have slightly less calories and more protein per serving, dark meat should not be discounted nutritionally, as the micronutrients are abundant. Dark meat contains more iron, zinc, riboflavin, thiamine, and vitamins B6 and B12 than white meat, and both white and dark meat have less fat than most cuts of red meat, so you really can’t go wrong either way! Skipping the skin will save more calories and fat whether you choose white OR dark meat. Then put somewhere to dry. 2. Add oil and dried peanuts on med/low heat, stir constantly. 3. When majority of peanuts color change add sea salt. 4. The amount of salt can vary depending on taste but this dish is suppose to be salty so add plenty of salt, at least enough to cover every peanut. 5. Remove from heat, drain and put into plate or bowl. 6.
