Quinoa Tabouli Salad with Feta & Garbanzo Beans Yield: 4-6 Servings Ingredients: 2 cups cooked quinoa ½ cup chopped scallions ¼ cup fresh chopped mint ½ cup fresh chopped parsley 1 cup Persian cucumbers, chopped 1 cup garbanzo beans 2 cloves of minced garlic ¼ cup fresh squeezed lemon juice 3 tablespoons extra virgin olive oil 1 large tomato, diced 2 oz crumbled feta cheese Salt and pepper to taste Process: Combine quinoa, scallions, mint, parsley, cucumbers, and garbanzo beans in a large bowl. In a separate bowl, (I like to use a spouted Pyrex cup) whisk together the garlic, lemon juice, and olive oil. Season with salt and pepper and then pour over the quinoa mixture, combine well. Gently toss in the tomato and feta cheese. Enjoy! Storage Tip: Keeping fresh herbs rolled in a damp paper towel and sealed in a plastic bag in the fridge will keep it fresh for almost 2 weeks.

I’m always curious about any kind of food, but things that are wrapped in packages of leaves… I’m enthralled and I have to stop everything I’m doing and buy one to see what it is. In this case, the lady at the market said it was called aeb (แอ๊บ), and she had a number of versions, once with catfish, one with tilapia, one with small fish, and another with minced pork. The version with tilapia fish, aeb pla nin (แอ๊บปลานิล) was what I settled for. I tore open my banana leaf wrapped little packet, and immediately a burst of aromatic herbs and spices came pouring out; It smelled incredible. I devoured the entire packet in a couple bites. Ever since that trip to northern Thailand, one of my favorite foods to eat are these little packets of fish or meat mixed with curry paste, wrapped in banana leaves, and grilled over charcoal. The biggest problem is, although this is a common Thai street food recipe and dish to find in northern Thailand, this exact dish is rare to find in other parts of Thailand - and that includes Bangkok - they are rarely available (yes, there are other variations of dishes cooked in banana leaves in other parts of Thailand, but not this exact one). Alright, so for this Thai fish grilled in a banana leaf recipe, here are the ingredients you’ll need: 2 tilapia fish (pla nin ปลานิล) - I deboned them myself, and I had about 600 grams of deboned fish meat - so you could also use fillets Banana leaves for cooking (bai tong ใบตอง, substitute foil if you need to) Toothpicks used to fasten the leaves together (fastening stick ไม้กลัด) Here are the ingredients for the curry paste: 2 lemongrass stalks (takrai ตะไคร้) 1 head of garlic (kratiem กระเทียม) 5 Thai shallots (hom daeng หอมแดง) 10 - 20 dry Thai chilies (prik haeng พริกแห้ง) 3 - 5 fresh Thai bird chilies (prik kee noo พริกขี้หนู) ½ kaffir lime peel (pew makrut ผิวมะกรูด) - from a kaffir lime ½ finger of fresh turmeric (kamin ขมิ้น) - In this video I used a whole finger, but I think it was too much, so better to use about ½ or so. Turmeric is sometimes used in Thai aeb recipes and other times it’s not, but I love it! 1/2 tsp salt (kleua เกลือ) Ingredients to mix with the fish: All the fish 1.5 tsp salt (kleua เกลือ) All the curry paste Some more additions to add to eat banana leaf package: kaffir lime leaves (bai makrut ใบมะกรูด) sweet basil leaves (bai horapa ใบโหระพา) lemon basil leaves (bai mengrak ใบแมงลัก) Be sure to watch the full video and read more on my blog about the full direction about how to make this Thai recipe, but overall, all you have to do is cut the fish into bite sized pieces, pound the curry paste until you have a coarse paste, combine the pieces of fish, curry paste, and salt, then wrap them into little packages of banana leaves, and finally grill them or roast them until fully cook. One of the reasons aeb pla nin (แอ๊บปลานิล), or any kind of aeb, is so delicious is because it’s wrapped in banana leaves which keep the fish moist and mingle all the flavors, and yet it’s grilled so it also has the smoky grilled flavor - it’s like baking and grilling all at the same time. You can choose for example, buckwheat, corn, and oats. There are natural fat burner, which normalize the metabolism and accelerate the fat burning process like cinnamon, ginger, turmeric, cardamom. Limit the fat amount that you add in your smoothies but you can add healthy fats like coconuts and avocadoes. [Sunshine Smoothie] 2 medium carrots, cut in chunks 1 medium juice orange ½ medium lemon, peel included About ½ cup unsweetened coconut milk Place everything into the blender and blend until smooth. Makes 2 servings. [Watermelon Smoothie] 1¼ Cup Watermelon ½ cup Strawberries ⅓ Cup Beets ¼ cup Coconut Coconut water to the max line Fill the Nutribullet cup, add coconut water to the max line and blend. [Peach Smoothie] 1 cup skim milk 1 cup frozen unsweetened peaches 2 tsp cold-pressed organic flaxseed oil PLACE milk and frozen, unsweetened peaches in blender and blend for 1 minute. Transfer to glass, and stir in flaxseed oil. [Sweet Spinach Smoothie] 2 cups spinach leaves, packed 1 ripe pear, peeled, cored, and chopped 15 green or red grapes 6 ounces fat-free plain Greek yogurt 2 tablespoons chopped avocado 1 or 2 tablespoons fresh lime juice In a blender or food processor, combine all the ingredients until blended to the desired consistency. [Chocolate Raspberry Smoothie] ½ cup skim or soy milk 6 oz. vanilla yogurt ¼ c chocolate chips 1 cup fresh raspberries Handful of ice OR 1 cup frozen raspberries COMBINE ingredients in a blender. Blend for 1 minute, transfer to a glass, and eat with a spoon. [Chocolate and Peanut Butter Smoothie] 3/4 cup frozen berries 1/4 cup low-fat vanilla yogurt 1/2 cup low-fat chocolate soy milk 2 tablespoons reduced-fat all-natural peanut butter In a blender, combine 3/4 cup frozen berries, 1/4 cup low-fat vanilla yogurt, 1/2 cup low-fat chocolate soy milk and 2 tablespoons reduced-fat all-natural peanut butter. [Mango Smoothie Surprise] ¼ cup mango cubes ¼ cup mashed ripe avocado ½ cup mango juice ¼ cup fat-free vanilla yogurt 1 Tbsp freshly squeezed lime juice 1 Tbsp sugar 6 ice cubes COMBINE all ingredients in a blender and process until smooth. Pour into a tall glass. Garnish with sliced mango or strawberry, if desired, and serve.

I just happen to luckily have a flight with Japan Airlines, and I made a video. All opinions are my own. I was in Phoenix, Arizona, and I had a flight to Singapore (with a different airline), and my wife and I were supposed to fly from Phoenix to Los Angeles to Hong Kong and finally to Singapore. It just so happened that our very first flight, which was just to Los Angeles, was delays by a couple of hours, which caused us to miss our flight from LA to Hong Kong and our flight to Singapore. But no worries, I try to be as positive as possible when there’s a flight delay or when there a problem with an airplane / staff, and rather try to be grateful that we are safe on the ground. Anyway, we ended up finally leaving for Los Angeles, and we arrived, but yes we did miss our flight on to Hong Kong. The airline we were supposed to fly on was in the Oneworld Airline alliance. And so they figured out a route for use, using different airlines to get to Singapore, almost at the same time as we were supposed to on the other flights. For our first leg, from Los Angeles to Tokyo, we took an airline from the US, which was alright, but nothing at all to rave about - the food and service were below average. But things really changed course when we arrived to Tokyo and stepped foot in Narita International Airport! We were immediately greeted by a lady that worked for Japan Airlines, she had our names written on a piece of paper, and we followed her to the customer service counter. They quickly issued us tickets to from Tokyo to Singapore, and they said: “You have complimentary access to the First Class Sakura Lounge.” I was pretty excited, so my wife and I rushed as fast as we could to the Japan Airlines first class lounge. The only problem, was that we only had about an hour until our flight was going to leave. Luckily we spent that hour very well, had some delicious Japanese curry and then proceeded to have a bunch of different drinks. I immediately liked the airplane - the seats were very comfortable, and it seemed to me like the economy class seats were bigger than some airlines. We also were lucky to get a very new airplane - not sure how their full fleet is, but I think Japan Airlines has a very new flight and very well maintained as well. As soon as we stepped into the plane, the staff of Japan Airlines all greeted us and were extremely nice, genuinely nice. Since our flight wasn’t too long, I think just under seven hours, we were mainly served just one meal, which was dinner. They even gave me a menu, and I chose the miso grilled pork. Just like all food in Japan, the platter of food on Japan Airlines came very nicely displayed, in little separate containers. The meal included a number of salads and side dishes, and the main dish was rice topped with grilled pieces of pork belly and everything smothered in a thick creamy miso sauce. Of course, if you compared this meal on Japan Airlines to food you could get on the ground in Tokyo, it wouldn’t come close, but being 10,000 meters in the air, this was one of the best meals I’ve had on an airplane. This was my first time to fly on Japan Airlines, and I have to give them an excellent review - it’s a fantastic airline - great service, great food, and very comfortable. My wife and I had an amazing flight, and arrived to Singapore to attend a food event.
