►More about how to cook a pig in an imu: http://migrationology.com/2015/05/polynesian-cultural-center-luau/ When I was in Hawaii, my wife and I were invited to go to the Polynesian Cultural Center to attend the center and to learn about how to cook a pig in an imu - a traditional style of underground oven cooking used in many parts of Polynesia. The Polynesian Cultural Center is an cultural park located on the north shore of the island of Oahu, Hawaii, that shows and preserves the cultures of the major island of Polynesia. They represent Hawaii, Fiji, Samoa, Tonga, Tahiti, and New Zealand. For each of the island nations, they’ve set up a traditional style village and displays about lifestyle, tradition, and food, of each island. When you enter the center, you can walk around to the different villages, and then go to see a series of different shows and cultural performances at each of the island villages. But along with touring the center and learning more about the islands of Polynesia, another draw to the Polynesian Cultural Center is the luau, which is a big Hawaiian feast. What I was most interested in learning about was the imu, a traditional Hawaiians style underground hot rock oven used to cook. In Hawaii it’s called an imu, but they have very similar forms of cooking throughout Polynesia that have a different name, but almost the same style of cooking. In order to cook using a Hawaiian imu, they first started with a pile of river rocks. The rocks were sitting on a bed of hard ironwood. The wood was burned, and the rocks sitting on top, were heated in the hot flaming wood for about 2 - 3 hours. During this time, we walked around the Polynesian Cultural Center and just enjoyed the beautiful nature and manicured gardens. After the rocks for the imu were heated, they removed all the burning wood - the wood was used only to heat the rocks - and spread out the rocks. David, who was teaching me about how to set up an imu, explained that the one we were using was sort of a Samoan style, because it was mostly above ground, as opposed to being dug into the ground too deep. After the hot rocks were spread out, they then added a layer of banana stalk to the top of the hot rocks, then on went an entire pig - it was a small pig, but a tasty pig. I could immediately hear the hiss of the meat sizzling on the hot rocks. After the pig, then on went about 20 layers of banana leaves, which were stacked on top of the pig in an effort to keep all the steam and smoke in and cook the pig. An imu is a slow method of cooking, and so after the imu was prepared, it took about 5 hours to cook, and during that time again, we walked around the center and enjoyed the cultural displays and performances. In the late afternoon, when it was time for the official Polynesian Cultural Center luau, we had access to the stage and were there to see them take the pig out of the imu. The pig cooked in an underground Hawaiian oven, after being cooked, is called kalua pig and is one of the most famous Hawaiian food. The rest of the food at the Polynesian Cultural Center was alright, but nothing compared to the pig cooked in the imu. I was lucky enough to get the pig cheek, which was incredibly flavorful, juicy and fatty. The other parts of the meat were fall apart tender and had a wonderful smoky flavor. *During the making of this video, I received the food and entrance to the Polynesian Cultural Center for free, but I did not get paid to make this video or write this blog posts. Don t be fooled by the low fat labels on products such as cheese. Cheese is always high fat. The same is true for most other products. Be aware of the calorie content of what you are eating. You re not sleeping enough. Sleep = repair. When your body gets enough rest, it s able to perform. You’re not active enough Make exercise a daily part of your life to increase your metabolism. It could be something as simple as taking the stairs instead of the lift every day or spending a few minutes walking from the parking lot to your office. You will soon notice the difference. You’re not drinking enough water Drinking water increases oxygen flow to your blood and gives your body the energy it needs to continuously burn calories and fat throughout the day. By drinking little to no water, you are failing to give your body what it needs to work off your excess baggage. Skipping meals. Skipping meals causes your blood sugar levels to spike and crash, affecting your energy and mood. Because you become so hungry, it leads to overeating. Our body also responds by slowing metabolism, retaining weight, and switching into famine mode. You ve hit a weight loss plateau. This usually happens after you have lost a few pounds and then suddenly you can t lose any. To overcome your plateau, shake up your weight loss routine by doing new exercise and by following a new eating plan. Weight loss has to be the easiest fitness goal to achieve. ►Read the full Thai fish curry recipe here: http://www.eatingthaifood.com/2015/05/thai-fish-curry-recipe-nam-ya/ ►Get my current food and travel updates (free): http://migrationology.com/food-news/ In southern Thailand there are a lot of amazing dishes and a lot of loved dishes as well, but nothing is as loved by locals in the south as a dish called khanom jeen nam ya (ขนมจีนน้ำยา), which is a minced fish curry, cooked in coconut milk, and filled with spices. I can still remember my first taste of khanom jeen nam ya (ขนมจีนน้ำยา), I remember how creamy and rich the curry was, with the most amazing spice mixture, spicy, fragrant, and teeming with lemongrass, and buttery coconut milk. Although I’ve tried khanom jeen nam ya (ขนมจีนน้ำยา) around parts of southern Thailand at both restaurants are street food stalls, I still think my mother in law makes the best version I’ve ever had, and so I’m pretty excited to share this recipe with you today - it’s her own recipe (although she doesn’t really use recipes as well, she just guesstimates all ingredients, but I tested out and wrote down her estimates, which should hopefully be pretty accurate). So this is a distinctively south Thai dish, and I know you’re going to love it. If you can get some fresh coconut milk, it will be better, but if not, I think one of the best coconut milks is AROY-D brand, and the one that comes in a box, instead of the can. Ok, here are the ingredients you’ll need for this Thai fish curry recipe: 800 grams of barracuda fish - this is a common fish to use in this recipe Around 800 ml coconut cream (หัวกะทิ hua kati) Around 1500 ml coconut milk (หางกะทิ han kati) - alternatively you can use about 2 litres of canned or boxed coconut milk with a little water 2 tbsp salt (เกลือ) 20 kaffir lime leaves (ใบมะกรูด) all of the curry paste which we’ll make below For the curry paste: pinch of salt (เกลือ) 4 stalks lemongrass (ตะไคร้) 2 fingers turmeric, about 40 grams (ขมิ้น) 20 grams Thai dry chilies (it was about 100 chilies) พริกแห้ง 1 head garlic (กระเทียม) 1 tsp black peppercorns (พริกไทย) 1 tbsp shrimp paste (กะปิ) Eat with the curry with: Fresh rice noodles, known as khanom jeen in Thai (เส้นขนมจีน), and I also really like to eat this Thai curry with rice. Also eat the curry with any type of raw vegetables like cucumbers, lemon basil, Thai sweet basil, green beans, Chinese long beans, bean sprouts - any kind of fresh raw vegetables or herbs. Once you have all the ingredients ready, this Thai khanom jeen nam ya (ขนมจีนน้ำยา) coconut milk curry recipes is not hard to make, and it doesn t take all that much time to cook either. The first step is to take the fish (make sure it’s already cleaned and gutted), cut it into pieces, and boil it in water on medium heat. Once the fish is ready, drain, and allow to cool. Then peel off the skin and discard, and debone all the meat, and kind of flake it with your fingers until you have minced pork. The next step is to make your curry paste by grinding all the Thai curry paste ingredients until you have a nice paste - it doesn’t need to be too fine, but you shouldn’t have any big chunks of anything. Finally, you need to assemble the curry by adding all the coconut milk to a pot, and then add in the curry paste, followed by the minced deboned fish. Keep the heat on medium, and stirring slowly and constantly, stir in just a single direction. Season with salt and also toss in the kaffir lime leaves. Boil while stirring gently for about 5 minutes, and you re ready to eat.
