Clean pan and heat another 2 tbs oil throw in scallions for 10 seconds, then add the tomatoes add salt and sugar then cover pan and let it cook for 2 min. add in eggs, break eggs apart among tomatoes, make sure all the eggs are covered in the juice. The most delicious and moist, healthy brownies! You ll never believe the ingredients. Gluten free. Paleo. And only 100 calories a brownie! You have to try them to believe it!!! If you cut this 8x8 tray into 16 pieces: Calories: 100 Fat: 6.5 Carbs: 8.5 Protein: 3 These amounts will make 16 brownies. (Or 9 bigger ones) If you want them thicker, double the recipe in the same pan. Same height but more brownies, double the recipe and put in 2 pans! Ingredients: 3/4 cup shredded zucchini 2 tbls honey 1/2 cup organic peanut butter 1/2 egg (just beat it and use half) 1/2 tsp vanilla 1/2 tsp baking soda 1/2 tsp cinnamon 1/2 cup dark chocolate chips, melted Directions: 1. Shred the zucchini using a grater. 3/4 of a cup is only about 1 medium zucchini. Make sure you press the zucchini down in the measuring cup. Place in a mixing bowl. 2. Add the honey, peanut butter, vanilla, baking soda, cinnamon and egg. (Since you’re only using half an egg, beat it in a bowl first and then just pour in about half! See that, the recipe is just calling to be doubled. Who wants to only use half an egg!? 🙂 ) Stir together. 3. Melt the chocolate and add to the mix. Stir together until all ingredients are well combined. 4. Place in an 8×8 pan with parchment paper and bake at 350 F for 25 minutes. Check with a toothpick. Mine were done at the 27 minute mark. Cook in the pan for a few, then take out using the parchment paper and place on a wire rack. Once they are completely cool, cut these babies up!

Blend until smooth. Be careful it s spicy! Beans Ingredients: Beans Red Onion Garlic Oil Water or Stock - If using canned beans drain and rinse. Chop red onion and garlic. Yes, how about a cold cucumber side dish? In Korean it’s called oi-naengguk and it’s perfect for summer! The thin cucumber matchsticks soaked in icy cold, sweet, sour, salty, and garlicky brine will please your appetite. The cold temperature is a nice surprise and the crispy but soft texture of the cucumber is wonderful. A great thing about this side dish is that you can make it in 5 minutes, and you don’t need to cook anything at all. Just cut the ingredients and mix. Make this in the summer time, and I guarantee everyone will love it. My cookbook co-writer, Lauren, learned how to make this when she was recipe testing, and got a ton of stars from her family when she served it. They are all fans of oi-naengguk now, and when the book was done Lauren told me it’s one of her favorite Korean dishes. I was surprised! I originally posted an oi-naengguk video years ago, but this one is a little updated and is a vegetarian version, and the video is HD. If you’re looking for the old one, it’s still here. Heat oil on medium heat in a pot. Cooking veggies until soft and add thyme. Once soft add water and add leftover chicken and chicken carcass. Cook for 15 minutes. Remove carcass and any bones. Add pasta and cook for 10 minutes. Add shredded chicken, parsley, salt, and pepper. Cook for 1-3 minutes, remove and garnish with chives. Enjoy!
