If you are ONLY eating one a day with your other meals, you have options. 1. Cut the recipe in half, or 2. Put 4 meals in the freezer and 3 meals in the fridge. 3. On Day 9 of our trip to Jordan we woke up at the Dead Sea. From the Dead Sea, we drove to the Ma’in Hot Springs, where we would spend the night. For lunch we learned how to cook a simple comfort Jordanian dish known as Mujadara, rice and lentils. In the afternoon we hung out and went to the ho waterfall springs, and then had dinner at the hotel. Overall, it was a pretty relaxing day in Jordan. 01:35 Touching the Dead Sea - Unfortunately the weather didn’t cooperate, and the Dead Sea was very rough, and so the lifeguard told me it wasn’t safe to go into the water. I had to settle for putting a little bit of the mud onto my hands, rubbing it around, and then going in for some of the mineral salts as well. The mud of the Dead Sea has so many minerals and is very healthy for the skin. The was able to go into the water just with my feet and wash my hands, but wasn’t able to fully go into float. The water was warm and salty. I was disappointed, but that’s alright. 04:50 Dead Sea Panoramic Complex - 2 JD ($2.81) - On the way driving we stopped off at the Dead Sea Panoramic viewpoint, a place on the side of the mountain that offers an incredible view of the Dead Sea and surrounding valley. They also had a rock museum there, which was pretty interesting. 05:33 Ma In Hot Springs Resort - We checked into the resort, and got settled and hung out for a little while before it was time to eat lunch. 06:27 Mujadara for lunch - The Ma’in resort offers cooking classes, and so for lunch we learned to cook a very local and typical Jordanian dish. We had been eating so much lamb on this trip that we decided to keep it pretty simple for the cooking demonstration and make a dish called mujadara. The dish included rice cooked with lentils and spices, then topped with freshly fried pine nuts and onions. We also made an Arabic salad, a salad of cucumbers, peppers, and tomatoes, dressed with lemon juice and olive oil. Lunch was very good, and quite simple. I especially loved the freshly deep fried pine nuts and fried onions which gave the entire dish a lovely fragrance and taste. 09:38 Ma in Public Hot Springs - After lunch Ying and I decided to go other to the Ma in Public Hot Springs. It was a pretty nice place, and there was a hot waterfall. I stayed for a few minutes, relaxing in the hot waterfall, and then headed back to the hotel. On Day 8 of our trip to Jordan, we drove from Wadi Rum to the Dead Sea. But in the morning before we left, we first had a camel ride in the desert. It was amazing to see Wadi Rum from the back of a camel, such a peaceful way to experience Wadi Rum. Once we reached the Dead Sea we enjoyed a couple of excellent Lebanese meals. 01:37 Camel Ride at Wadi Rum - Along with a truck safari, one of the best ways to see Wadi Rum is my taking a camel ride. Due to the rain, we couldn’t ride camels the day before, so we decided to ride today in the morning. Although it quite hurt my legs, it was well worth it, and a very fun way to see Wadi Rum. After having breakfast at the tented camp, and riding the camels, we jumped in the car and started driving towards the Dead Sea. 05:08 Mount Nebo - 1 JD ($1.41) - On the way to the Dead Sea, we stopped off at Mount Nebo, the place where God showed Moses the promised land with a view overlooking an expansive area of land, we could even see the Dead Sea. It was an amazing view. 05:59 Ocean Restaurant (Dead Sea) - As soon as we reached the Dead Sea, we were all very hungry, so we stopped at Ocean Restaurant, a Lebanese restaurant with a view of the sea. All of a sudden they started bringing masses of mezze to our table, until the point where there was literally not a single empty space on our table. There were so many different dips and appetizer dishes to choose from including cheese sticks, kibbeh, heart of palm salad, hummus, grape leaves, tabbouleh, and moutabel. There were so many different Lebanese mezze dishes that I forgot all about the Dead Sea! For our main dish at Ocean Restaurant we had a dish called sayadieh, which is a seafood platter including fish and biryani rice served with a tomato sauce. There was both fried and grilled fish, and what I really liked in the dish was that it was served with a deep fried onion, which tasted fantastic. For dessert, they brought out giant plates of fruit and a variety of different desserts including osmalieh and aish el saraya. 13:13 Crowne Plaza Jordan Dead Sea Resort - After our incredible late lunch, we drove to the Crown Plaza Resort, and checked in. We stayed just for one night. 14:07 Burj Al Hamam - Lebanese Restaurant at Crown Plaza Hotel - For dinner we ate at Burj Al Hamam, one of the most well known restaurant names in Lebanese food in Jordan. Again, we were served an impressive array of different mezze starter dishes, but they served us a few dishes that were different from what we had eaten for lunch including kibbeh nayyeh. I’ve always been a huge fan of different types of raw meat dishes, and kibbeh nayyeh is the Lebanese version of raw minced beef mixed with a variety of spices. It’s typically eaten with garlic sauce and olive oil to garnish, and scooped up with pieces of bread. It was amazing. For our main dish we had mixed grill, including kebabs, lamb pieces, and chicken, and then kebab khashkhash, kebabs in tomato sauce. Using your hands, roll the dough into balls about the size of large gumballs. Place on a cookie sheet lined with wax paper, and refrigerate until set. Makes about 18 balls. Notes: Peanut Butter It tastes great and can satisfy cravings and even keep them from coming at all. In The Abs Diet peanut butter is recommended for use in smoothies and is labeled a superfood. Almond butter is also a good fat to have that can provide a lot of creamy goodness, but it’s generally more expensive than peanut butter. Flax Seeds Flax seed is best known for its fatty acids and fiber. When talking about omega fatty acids it is better ask what they can’t do then what they can. This powder plays its part in proper cardiovascular and immune system health, brain function, joint function, soft skin, and more. The fiber in flax is also good for many things, but especially effective with eliminating toxins from your body. Add just one tablespoon of ground flaxseed or try whole seeds to your smoothie for a subtle, nutty flavor with more than subtle nutrition.

Without doubt, Wadi Rum is one of the most beautiful deserts I’ve ever seen in my life. The landscapes are so other-worldly, that many movies that occur on Mars of the moon have been filmed there. Ond Day 7 of our trip to Jordan, we drove from Petra to Wadi Rum. We arrived just in time for lunch at Captain s Bedouin Desert Camp. It was a very rare cloudy and rainy day, and so we got some rain, and finally when it cleared we went on a desert safari in the back of a truck. The views were spectacular. 00:58 Drive from Petra to Wadi Rum - At the beginning of the day, we had breakfast at Movenpick and then started the drive, which only took a couple hours, to Wadi Rum. Along the way we stopped at a few rest stops to get some Arabic coffee, something I couldn’t resist. 2:04 Arriving to Wadi Rum - We arrived to Wadi Rum just in time for lunch and the first thing we did was check into Captain s Desert Camp, which is the Bedouin camp we stayed at for the night. As soon as we arrived we had lunch, and they served us a full spread of food including labneh and moutabel. The labneh in particular was very good. For our main dishes we had galayet with beef, a beef tomato stew, and also a dish called mfarakeh, which was scrambled eggs with potatoes. Lunch at Wadi Rum was delicious and after lunch, due to the rain, we took a short rest before heading out. 07:15 Wadi Rum tour - We hopped into the back of a truck, and started our Wadi Rum desert tour. The weather wasn’t the best, it was still kind of rainy, but at the same time that kind of added to make it a bit of an eerie environment. The view of Wadi Rum were spectacular, it truly is a unique and incredible desert to see in the world. We drove around and stopped at a number of different locations around the desert, taking in the scenery. After a two hour safari around Wadi Rum we returned to the camp. 11:15 Zarb Bedouin barbecue for dinner - For dinner we ate a dish called zarb, which is Bedouin style barbecue. Similar to other cultures, zarb is a variety of meat of vegetables that are cooked in an underground oven over charcoal. They first added a bed of hot coals to the underground oven, spread them out, then added in a shelf full of meat and vegetables. They covered it with a bunch of layers, and finally topped the oven with sand to keep in all the heat. It took about two hours to cook, and we came back for dinner to find soft and tender lamb, rice, and a variety of vegetables cooked in the zarb, that were all incredibly tender. Reduce heat and simmer for 5-8 min. Add snap peas and greens. Cook for an additional 2-3 min. Season with salt and pepper to taste Serve with fresh lime wedges & cilantro. Store in the refrigerator for up to 5 days Pineapple Fried Rice 1 tsp sesame oil 1 tbsp soy sauce 1 tbsp Sriracha 3 cloves garlic, minced 1 tbsp fresh ginger, grated 4 green onions, finely sliced 2 tbsp coconut oil 2 cups pineapple, medium dice 1 red bell pepper, medium dice 1/2 cup red onions, finely diced 2 cups cooked rice 1/4 cup roasted cashews, roughly chopped fresh cilantro 1 lime In a small bowl whisk sesame oil, soy sauce, Sriracha, ginger, garlic & green onions & set aside In a large skillet on med-high heat, melt coconut oil & add pineapple. Cook for approximately 4 min. Add onion and bell pepper. Sauté for an additional 2-3 min, or until vegetables have softened. Stir in rice and soy sauce mixture. Cook for an additional 1-2 min Serve immediately with roasted cashews, cilantro & lime wedges, or store in the refrigerator for up to 5 days Spicy Kimchi Soup 6-8 cups vegetable broth 1 tbsp coconut oil 1 onion, finely diced 2 cloves garlic, minced 2 tsp ginger, grated 3 carrots, peeled and sliced 3 celery ribs, sliced 1 cup mushrooms, sliced 1 red bell pepper, sliced 1 cup kimchi 1 tsp red chili flakes In a large soup pot or Dutch oven heat oil over med-high. Add onion & sauté for 2 to 3 min. Add garlic and ginger & cook for an additional minute. Add broth, carrots and celery. Bring mixture to a boil & then reduce heat to medium low and simmer for about 10 minutes. Add mushrooms, bell pepper and kimchi. Simmer for another 5 min. Season with red chili flakes Store in the refrigerator for 4 to 5 days Crunchy Rainbow Rolls with Peanut Dip 2 mangoes, sliced 2 carrots, julienned or grated ½ English cucumber, julienned 1 red bell pepper, finely sliced 5 green onions, julienned ½ cup red cabbage, shredded 2 cup vermicelli noodles, cooked ½ cup cilantro, roughly chopped 20 round rice paper wrappers Soak rice paper rounds, one at a time in warm water for 15-20 seconds and lay flat on a cutting board. In the centre of the lower third of the wrapper, place a few pieces of each vegetable and top with vermicelli noodles. Add cilantro & begin to wrap. Start by wrapping the bottom of the rice paper over the filling and tuck in the filling as you roll to about half way up the wrap. Fold the sides of the rice paper toward the centre of the roll and continue rolling up Serve immediately or store in the refrigerator in an airtight container with a damp towel for 3-4 days 1 cup natural peanut butter 3 tbsp soy sauce ¼ cup lime juice 2 tbsp Sriracha 1-2 tbsp coconut sugar (optional) 2 tsp fresh ginger, grated hot water to thin In a small bowl, mix together peanut butter, soy sauce, lime juice, Sriracha, coconut sugar and ginger. Gradually whisk in hot water to thin dip out until it reaches your desired consistency Tofu Breakfast Scramble 2 tbsp coconut oil 1 red bell pepper, finely diced 5 green onions, finely sliced 1 block firm tofu, crumbled 1/2 tsp red pepper flakes 1/2 tsp garlic powder 1/2 tsp turmeric 1 tbsp soy sauce 2 cups bok choy leaves or spinach salt and pepper to taste Heat coconut oil in a large skillet over med-high heat. Add bell pepper & sauté until softened. Add green onions, tofu, red pepper flakes, garlic powder, turmeric and soysauce. Mix well & add bok choy leaves or spinach. Once leaves are wilted & tofu scramble is hot, add salt & pepper Serve immediately with a sprinkling of sesame seeds and some fresh cilantro or refrigerate for 4-5 days Sauteed Baby Bok Choy 2 tbsp coconut oil 4-6 baby bok choy, sliced in half salt and pepper to taste In a large skillet on med-high, melt coconut oil & add baby bok choy. Sauté until leaves have wilted. Season salt & pepper to taste. Serve immediately or store in the fridge for 3-4 days Wasabi Ginger Chickpeas 1 19oz can chickpeas 1 tbsp olive oil 1 tbsp wasabi powder ½ tsp ground ginger ¼ tsp garlic powder sea salt to taste Preheat oven to 375F. Rinse & drain chickpeas and dry them with paper towel Toss chickpeas with olive oil, wasabi powder, garlic powder & salt. Bake at 375ºF for 35-40 min tossing regularly. Allow chickpeas to cool before storing

Petra, also known as the Lost City or the Red Rock City, is an ancient Nabatean holy city, carved into the rocks in southern Jordan. It’s an amazing place to see in the world and a UNESCO World Heritage Site. Check out my Amman travel guide: http://migrationology.com/travel-guides/amman-jordan/ On Day 6 of our trip to Jordan, we woke up in the morning, had breakfast at our hotel, and continued on to the gates of Petra. The entrance ticket price of visiting Petra is 50 JD ($70.23), which is on the pricey side, but well worth it to visit this incredible city. Before going into the gates, I stopped on the outside and purchased a keffiyeh (4 JD ($5.62), the traditional Middle Eastern checkered cloth headdress. After that, I was ready to go and explore Petra! When you see pictures of Petra, at least in my case, you can’t really tell how big it is, or the scale of it - it’s not just one building on tomb, but it’s an entire city, spread out through the red rocks of Petra, through canyons and valley and rock mountains. So it’s a huge site that can take a full day, or even many days (if you had the time) to explore. So rather than just going to see a single attractions, Petra is like walking into a historical amusement city, full of surprises, mountains to climb, and ancient tombs to explore. Just for a bit of history, Petra was built by the ancient Nabateans, likely somewhere around the 300 BC date range. The Nabateans were a nomadic Arabian tribe who were specialist in trade, especially across the Arabian desert. They would run camel caravans and trade to lands across the desert, and due to their incredible desert and sky skills, they could navigate the desert and not only survive, but thrive. They made a fortune trading frankincense and myrrh, and doing so, they made a fortune. Similar to the ancient Egyptians, when the Nabateans became very wealthy, they started to think more about their after-life, and so they decided to build tombs within the rocks of Petra. At first I was thinking that the sites of Petra were temples or houses, but the majority, especially the fancy ornate rock carving at Petra are all tombs. The city of Petra eventually became deserted, and it was hidden for about a thousand years, before being rediscovered by Swiss explorer Johann Ludwig Burckhardt in 1812. After entering the Rock City, you first walk through a slot canyon, which was the main roadway leading directly into the center of Petra. You can either walk, or they also have horse chariots if you want to ride. One of the most famous tombs at Petra is known as the The Treasury (Al Khazneh), which was named so because some people believed there was treasure hidden high in the rock above it. The Treasury, also a tomb, is one of the best preserved and most incredible things to see when you visit Petra. The tombs are carved directly out of the side of the red rock mountains, and what’s really interesting is that the Nabateans were influenced by many different civilizations, as one can tell from the construction. The Treasury has lots of Greek influence, along with Arab and local Middle Eastern details as well. We continued hiking, and visiting many more of the tombs around Petra. Another famous place to see in the city is The Monastery (Ad Deir), which requires a hike that took about 45 minutes. The Monastery looks remarkably similar to the Treasury, but it’s just three times the size. There are some incredible views, and from The Monastery, you can do some more small hikes to get some wonderful views of the rugged mountain rocks. For dinner we headed to a restaurant in town called Al Qantarah - a nice restaurant housed in a rock building. Along with some fantastic fresh fish, that the owner of the restaurant had caught himself, we also had a main dish of lamb and rice cooked in a claypot. The lamb was amazingly tender and the rice was fragrant. DEFINITELY one of my tastiest challenges yet! (And with a $25 price tag for over $200 worth of sushi? I m game!) Check out the video to see how I did! I do just want to say that I HATE Avocado (and Jalapenos). While every roll seemed to be loaded with both of them, I felt like the extremely large amounts of mayonnaise and cream cheese in most of the rolls masked the flavor of it, so I was able to handle it. It was more of the texture of the Avocado that started getting to me. The rolls were absolutely DELICIOUS, but after roll 15.. I started to feel the food wall. (Mainly because waiting over 20+ minutes for re-orders while the massive amounts of starch sat in my stomach really got to me as well). I d estimate I took down between 9-10 lbs of sushi, and again... likely over $200 worth! We had an incredible local lunch, and were served a dish called muqlaba, which literally translates to upside down - it was an incredible local meal. Finally, we moved onto Petra, and after checking into our hotel, we went to Petra by Night. 00:23 Breakfast and Leaving Hotel - To begin the day, I had a quick breakfast as the hotel in Amman, and then we packed everything up and headed off to do some traveling around Jordan. Driving towards the Dana Biosphere Reserve, we took our time, stopping off at a variety of different rest stops. One of the things I grew to love immensely while traveling in Jordan was Arabic coffee, and the good news is that coffee was available at every rest stop along the highway. 1:41 Maqluba (مقلوبة) at Dana Biosphere - The Dana Biosphere is a nature reserve in Jordan. The reserve is home to a variety of different natural environment, and starts on a plateau and descends all the way down in the Wadi Rum valley. The views of the valley were incredible. We continued driving until we reached the Dana Village, located on a hill overlooking the valley - it’s a historic town in Jordan, and they are trying to renovate certain areas of it - it’s an amazing little village. They had set up for us to have a local Jordan food lunch at a home within the village, so after walking around for a little while, we went inside to have lunch. There’s a famous Middle Eastern, Arabic dish, that’s also very common in Jordan called muqluba (مقلوبة), which directly translates to upside down. The reason it’s called upside down, or flipped over, is because the dish is cooked in a big pot, with meat and spices, or in this case chicken, topped with rice all in the same pot. When the dish cooks, all the flavors start to mingle and blend to create another incredible dish. When it’s finished cooking, the pot is flipped over onto a tray, so the rice goes to the bottom, while the meat stays on top - that’s the upside down part. After the rice and chicken was flipped onto the tray, it was then topped with lots of chopped up parsley, fried peanuts, and finally some lemon slices for decoration. The dish was incredible, the r 11:08 Wadi Musa, Movenpick Hotel, Musakhan for dinner - After our incredible lunch at Dana Village, we continued driving. Along the way to Petra, we stopped at Wadi Musa, which is said to be the place where Moses struck the rock and water came out. There was a rock there, and extremely clear water was flowing out. We drove to Movenpick Hotel at Petra, and we checked in. For dinner, we ate at the Movenpick buffet restaurant, and they had a good selection of both Western and Jordanian food. The dish I was most interested in eating was the musakhan, a Jordanian and Palestinian food of bread, chicken and spices, all cooked in lots of olive oil. It was my first time to try it, and I enjoyed it - and I can only imagine how much better it would be home-cooked. 14:58 Petra By Night - Petra is the most famous attraction in all of Jordan - some people will visit Jordan with a specific purpose to visit the historical city. One company decided to set up candles in paper bags and open Petra by Night, so you can visit the main Treasury at night. Ying and I took the walk, and it was pretty cool, but it was still so dark, that honestly I couldn’t really see anything, and my camera couldn’t really pick up anything as well.
