Add chorizo. When chorizo starts to brown, add onion, green and red peppers & cook until onions soften. Add garlic and paella rice & cook for an additional 3 minutes. Add crushed tomatoes, chicken broth, saffron & paprika. Reduce heat & cook, stirring occasionally, until rice is soft cooked & liquid is mostly absorbed. Add green beans & shrimp and cook until shrimp is cooked through. Season with salt, pepper & fresh parsley and garnish with lemon wedges. Serve immediately or store in the fridge for up to 3 days Roasted Potatoes with Smoky Tomato Sauce Roasted Potatoes 2lbs potatoes, roughly cubed 1 tbsp olive oil 1 tsp garlic powder 2 tsp smoked paprika salt and pepper Smoky Tomato Sauce 1 tbsp olive oil 1 Spanish onion, finely diced 1 clove garlic, minced 1 tsp dried oregano 1 tsp fennel seeds 1/4 tsp smoked paprika 1 14oz can diced tomatoes, drained 1 tbsp sherry vinegar salt and pepper On a baking sheet toss potatoes with olive oil, garlic powder, paprika, salt and pepper to taste. Roast at 400F, stirring occasionally, for 45 min or until golden and crispy. In a skillet heat olive oil and sauté onions until softened. Add garlic, oregano, fennel seeds, smoked paprika and diced tomatoes and cook until sauce begins to reduce. Remove from heat and stir in sherry vinegar. Season with salt and pepper. Serve chunky or blend with immersion blender. Pour sauce over potatoes just before serving.Store for up to 4 days in the fridge Chilled Gazpacho 1 green bell pepper, roughly chopped 1 red bell pepper, roughly chopped 1/2 Spanish onion, roughly chopped 1 clove garlic, minced 5 tomatoes, roughly chopped 1 cup English cucumber, roughly chopped 1 cup stale bread, roughly chopped 1 cup water 1-2 tbsp sherry vinegar 2 tbsp olive oil 1/4 tsp cumin salt and pepper In a food processor or blender combine all of the ingredients and blend. Adjust seasoning to taste. Refrigerate for at least an hour before serving. Store in the refrigerator for 3-4 days Orange & Fennel Salad 3 tbsp olive oil ¼ cup orange juice 2 tbsp parsley, finely sliced salt and pepper 1/2 Spanish onion, thinly sliced 1 fennel bulb, thinly sliced 3 navel oranges, peeled and sliced 5 cups arugula 1/3 pine nuts, toasted In a small bowl whisk orange juice, olive oil, parsley, salt & pepper. Divide dressing between 5 jars. Layer in fennel, oranges, onion, arugula and top with pine nuts. Store in the refrigerator for 4-5 days Mini Spanish Frittatas 6 eggs 1/2 tsp smoked paprika salt and pepper 5 slices of smoky bacon, sliced 1/2 Spanish onion, finely sliced 1 clove garlic, minced 1/4 cup roasted red peppers 2 cups baby spinach 1/2 cup Manchego cheese, grated In a large bowl, whisk together eggs, Manchego cheese, paprika, salt & pepper & set aside. In a skillet fry bacon over medium heat until it becomes slightly golden. Add onion and sauté until softened. Add garlic, roasted red peppers and spinach and cook until spinach is wilted. Spoon mixture into well-greased muffin tin. Fill with egg mixture. Bake at 375°F for 15 min or until eggs are set. Store in the fridge for up to 4 days Roasted Peppers & Onions 1 red bell pepper, chopped 1 orange bell pepper, chopped 1 Spanish onion, chopped 2 tbsp olive oil 1 tsp garlic powder 1 tsp smoked paprika salt and pepper Preheat oven to 350°F. On a baking sheet toss peppers and onions with olive oil, garlic powder, smoked paprika, salt and pepper. Roast for about 30 min, stirring occasionally, or until peppers and onions are soft and caramelized. Store in the fridge for 4-5 days Smoky Spiced Almonds 2 cups raw almonds 1 tsp ground cumin 1/2 tsp smoked paprika 1 tbsp olive oil salt and pepper Preheat oven to 400°F and toast almonds for 7-10 min making sure not to burn. Once almonds are golden, remove from oven and toss in olive oil, smoked paprika, cumin & salt and pepper to taste. ►Jakarta Travel Guide for Food Lovers: http://migrationology.com/travel-guides/jakarta-indonesia/ A couple years before I started ever making food and travel videos, I visited Indonesia, and it was one of the most amazing places, both in terms of food, natural scenery, and people, that I have ever visited. And I always knew I needed to come back again to visit Indonesia, this time with my camera. We only had a couple weeks, so rather than try to rush from one place to another (although I’d love to visit many more islands and cities throughout Indonesia), for this trip, my wife and I just decided to spend our time in Jakarta to really get a feel for the city and its amazing blend of food. We started off at Bangkok’s Don Mueang International Airport, the budget airline airport, where you’ll often fly out of when you’re taking short flights around Southeast Asia. We caught a direct flight from Bangkok to Jakarta and the flight took about 3 ½ hours from Bangkok to Jakarta. In Jakarta we landed at Soekarno–Hatta International Airport, and after we got our bag, we proceeded to the taxi stand. One of the best taxi brands to take in Indonesia is Blue Bird taxi, and they are very reputable, and have an official stand at the airport. We waited in line just for a few minutes until a Blue Bird taxi came, and we got in. I had pre-booked an Airbnb apartment to stay in, so we took a taxi directly there, located in the heart of Jakarta, in the Mangga Besar area of Jakarta. The taxi ride took probably about 45 minutes and it cost a total of 135,000 IDR ($10.22) - this is a similar price that you would pay for a taxi from the Jakarta international airport to the center of the city. After checking in, we really didn’t know what we were doing or where we were, but both Ying and I were hungry. So we took a walk down Mangga Besar road. I didn’t know the area was famous for Chinese street food, but we found a number of tents selling Indonesian Chinese street food. We were both so hungry that we stopped at a place called Sin Moy Kong Chinese Food. The food was all Chinese, and even though the menu was all in Bahasa Indonesia, I managed to order a few dishes. The food was alright, and our total bill for everything came to 189,000 IDR ($14.31). Dijon Mustard • 1 can tuna • pepper to taste PREPARATION 1. Separate egg yolks from egg whites. 2. Mash egg yolks in small bowl. Stir in remaining ingredients except egg white halves. 3. Spoon or pipe yolk filling into egg whites. Chill, if desired. Garnish, if desired, with parsley and sprinkle with paprika. Did you know? Tuna contains a lot of vitamin D and light tuna contains all the more Vitamin D. The oil-packed ones help to retain more omega-3 fatty acids. Tuna offers abundance of immune-boosting selenium along with good amount of proteins. Eggs - an organic egg will help you feel full all day. Eggs are a good source of protein and have 13 different vitamins and minerals, including iron and vitamin D. A study has found that folks who ate eggs were feeling less hungry through the day, eating about 330 fewer calories overall.
**CHALLENGE STARTS AROUND 4:05** The "Lucky Seven Challenge" at China Blue in Corvallis, Oregon! ONE HOUR. 7 POUNDS. 7 TYPES OF CHICKEN. $1,300 JACKPOT. What a hell of a challenge this was! Just a little bit of a backstory. This challenge features a progressive JACKPOT that increases every single month by $100 every time that it s not completed. This jackpot was won last year by Stephanie Wu who took home $1,500. I was a day away from booking a flight last year before I was informed that the challenge had been completed. Very discouraged, that being said.. When I was informed of the jackpot recently I vowed to take on the challenge. I headed out after class late on Wednesday night and took the 16 hour drive and the rest is history. The challenge features SEVEN pounds of SEVEN different kinds of chicken. Here they are, listed in order of the best tasting (in my opinion) 1. Hazelnut - 9/10 (Middle bowl) 2. Mandarin - 8/10 3. Sweet and Sour - 8/10 4. Orange - 7/10 5. General Taos- 7/10 6. Hunan - 5/10 7. Lemon - 3/10 Like I said, I went into this challenge extremely tired, fatigued and without much hunger as I drove 15 hours straight to get up to the restaurant. The chicken came out PIPING HOT. I used ice cubes and a separate plate to cool them down. The breading on the chicken was extra thick and I d estimate the chicken weighed almost EIGHT pounds (instead of the listed 7 pounds). Since I do not consume meat, I was very nervous about taking down this colossal amount in one sitting. In a large zipper bag add chicken and hot pepper purée. Massage into chicken and let sit in the refrigerator for at least 2 hours. Preheat oven to 400F and spread chicken on a baking sheet. Bake chicken for approximately 40-45 minutes or until chicken reaches 165F. Store in the refrigerator for up to 3 days. Rice & Peas 1 tbsp coconut oil 1/2 onion, finely diced 2 garlic cloves, minced 1 tbsp fresh ginger, grated 1/2 tsp ground allspice 1 cup rice 1 14oz can coconut milk 1 1/2 cup broth or water 1 can red kidney beans, rinsed and drained 3 green onions, sliced salt and pepper In a medium saucepan melt coconut oil over medium heat. Add onion and and cook for 3-4 minutes. Add garlic, ginger and allspice and sauté for an additional minute. Add rice, coconut milk and broth. Gently simmer for approximately 20 minutes, or until rice is cooked and liquid is absorbed. Stir in kidney beans and green onions and let sit for a few minutes or until beans have heated through. Store in the refrigerator for 3-4 days. Spiced Pumpkin Soup 1 tbsp coconut oil 1 onion, finely diced 4 garlic cloves, minced 1 scotch bonnet pepper, seeded and minced (optional) 4 cups vegetable broth 1 cup coconut milk 4 cups pumpkin puree 1 tsp fresh thyme leaves 1/4 tsp allspice salt and pepper In a large soup pot melt coconut oil over medium-high heat. Add onion and cook until it becomes soft, about 3-4 minutes. Add garlic and scotch bonnet peppers and cook for another 30 seconds. Add broth, coconut milk, pumpkin puree, thyme and allspice. Simmer for 10-15 minutes. Season well with salt and pepper. Serve immediately or store in the refrigerator for 4-5 days. Mango Shrimp Salad 2 tsp coconut oil 1 lb shrimp 1/2 tsp red chilli flakes salt and pepper 2 limes, juiced 3 tbsp olive oil 1 tbsp fresh cilantro, finely chopped ½ jalapeno, minced 2 mangoes, diced 1 red bell pepper, diced 1/2 red onion, finely diced mixed greens Heat coconut oil in a large skillet over medium-high heat. Add shrimp and season with red chili flakes, salt and pepper. Cook for 3-5 minutes until pink and opaque. Remove from heat and set aside. In a small bowl whisk lime juice, olive oil, jalapeno and cilantro. Divide dressing between 5 jars. Layer red pepper, mango, red onion and greens. Toss before eating. Salads can be refrigerated for 4-5 days. Store shrimp separately for 2-3 days. Tropical Breakfast FroYo 1 cup plain yogurt 2 ripe bananas, sliced & frozen 1 cup pineapple, chopped & frozen 1 cup strawberries, Chopped & frozen 2 tbsp honey 1 tsp vanilla extract Thaw frozen fruit for 5-10 minutes. In the bowl of a food processor combine yogurt, banana, pineapple, honey and vanilla extract. Blend until mixture is completely smooth. Add strawberries and pulse until strawberries are mixed in but still chunky. Store in the freezer for up to 1 month. Serve with granola. Roasted Peppers, Corn & Pineapple 1-2 tbsp coconut oil, melted 2 red bell peppers, diced 2 cups corn, fresh or frozen 1 red onion, diced 2 cups pineapple, diced salt and pepper On a large non-stick baking sheet combine red peppers, baby corn, red onion and pineapple. Toss with coconut oil and season with salt and pepper to taste. Bake at 400F for 20-30 minutes or until vegetables have softened and are slightly caramelized. Store for 4-5 days. Tropical Trail Mix 1 cup roasted cashews ½ cup dried pineapple ½ cup banana chips ½ cup dried mango ¼ cup dried papaya ¼ cup candied ginger ¼ tsp ground allspice In a medium bowl, toss together all ingredients.
