STUFF From this video: ► Bento Box: http://amzn.to/2huhKly ► Vitamix: http://www.tkqlhce.com/click-8488026-13085456 SALMON SWEET POTATO PATTIES Ingredients 10 oz salmon (2 5-oz cans), drained 1 cup sweet potato mash/pureé 2 green onions, chopped 1/4 cup carrot, grated 1 egg 2 cloves garlic, minced ½ cup bread crumbs 1 Tbsp cilantro, chopped 1/4 tsp garlic powder 1/4 tsp salt & pep, to taste Procedure Mix all ingredients together, seasoning to taste. Heat a skillet over medium-high heat and spray with cooking spray. Scoop out a heaping tablespoon of the mixture and transfer it to the skillet, molding into a flat patty between 1/4” and 1/2” (0.5-1.25cm) thick. Allow to cook 4-5 minutes on each side, until golden brown. Enjoy! GREEN RICE SALAD Ingredients 1 cup spinach, tightly-packed 1/4 cup cilantro 1/4 cup parsley 2 tsp olive oil 1/2 cup onion, diced 2 garlic cloves, diced 1 cup long grain rice, uncooked salt, to taste 2 cups broth, vegetable (or chicken if preferred) 1 cup corn Procedure Combine 1 cup of water with the cilantro, parsley and spinach in a blender. In a saucepan over medium heat, sauté onion and garlic in olive oil. Stir in rice, salt, broth, and green water. Bring to a boil. Turn down to low and simmer until water is absorbed (around 12-15 minutes). Keep covered. Remove the pot from the heat and allow to sit covered for 15-20 minutes. Fluff with a fork and stir in the corn kernels. Enjoy! PARMESAN ZUCCHINI CARROT CRISPS Ingredients 1/2 cup zucchini, grated 1/2 cup carrot, grated 2 cups grated parmesan cheese Procedure Preheat oven to 375°F. Remove excess moisture from grated zucchini and carrot by squeezing them out in a paper towel. Mix zucchini, carrot and parmesan together. Line a baking sheet with parchment paper and spray. Transfer about 1 tablespoon of the mixture to the baking sheet and flatten it into a chip shape. Bake for about 8 minutes, until crisp and lightly golden on the sides. Allow to rest before devouring! Lasts 2 days, but best served same day. Combine all ingredients (except for blueberries) in a blender until smooth. Stir in blueberries. Transfer the batter to a sprayed mini muffin tin and fill about ⅔ of the way full. Bake for about 12 minutes, until a toothpick comes out clean. Cool before enjoying and storing. BUTTERNUT SQUASH LENTIL SALAD Ingredients 1 cup lentils, cooked 1 cup butternut squash, cooked & cubed 1 small apple, chopped 3 Tbsp walnuts, chopped 2 Tbsp feta cheese 2 tsp olive oil 1 lime, juiced 2 Tbsp cilantro 1/2 tsp curry powder 1/2 tsp salt Procedure Whisk together olive oil, lemon juice, cilantro, curry powder and salt. Add remaining ingredients and toss to combine. Chill and enjoy! BEET & EDAMAME SALAD Ingredients 2/3 cup beets, cooked & chopped 1/3 cup edamame 1/3 cup shredded carrot 2 Tbsp pepitas 2 Tbsp crumbled goat cheese 1 tsp olive oil 2 Tbsp fresh basil pinch of salt, to taste Procedure Toss all ingredients together and mix to combine. Season to taste. Enjoy! Place a few cans of food or something heavy on top to weigh it down and “press” the tofu. This will help get the moisture out of the block. Press for 1-4 hours. Cut tofu block into ¼” slabs for quicker cooking. Mix soy sauce, olive oil and peanut butter to make your dipping sauce. Brush the sauce onto each slab of tofu. In a sprayed skillet over medium-high heat, cook the tofu 3-4 minutes on each side, until golden brown. Cut each slab into smaller strips for spring roll assembly. To assemble, soak your spring roll wrapper in warm water according to package directions (some require 5 seconds, some up to 60). Add tofu strips, as well as slices of fruits, vegetables and cilantro. Roll up “burrito-style,” working quickly before the spring roll wrapper loses elasticity, and pinch to seal. These are best enjoyed the same day as assembly. CRISPY EDAMAME Ingredients 1 cup shelled edamame ½ tsp olive oil ½ tsp garlic powder 1/4 tsp oregano 1/2 tsp paprika Procedure Preheat oven to 400°F. Dry your shelled edamame between paper towels. Toss dried edamame in olive oil and spices. (Remember that you can use any spices you prefer!) Spread the edamame on a baking pan lined with parchment. Roast 25-30 minutes, stirring 1-2 times. Allow to cool slightly—they will continue to crisp! BROWNIE GRANOLA BITES Ingredients 1/2 cup almonds 1/2 cup pitted dates 1 1/2 Tbsp cocoa powder pinch of salt Procedure If your dates are hard, soak them in warm water for a few hours so they are easier to blend. Combine all ingredients in a food processor and blend until sticky. Add salt to taste. The amount will also depend on whether you choose to use salted almonds or not. Roll into balls around the size of 2 tsp each and refrigerate to firm up. Enjoy! Transfer into a bowl and to with a few more chopped apples, raisins, and walnuts. Enjoy. BROWN RICE AND BLACK BEAN LUNCH BOWL 1 cup of cooked brown rice 1 cup of black beans 2 tsp. coconut oil 1/2 tsp. garlic powder salt and pepper 1/2 diced avocado 1/2 cup diced tomatoes Add the black beans to the hot brown rice and mix with coconut oil, garlic powder, salt and pepper. Gently stir in avocado and tomatoes and enjoy! VEGGIE FRIED BROWN RICE 1 tsp. toasted sesame oil 1/4 cup chopped onion 1 clove chopped garlic 1 tbsp.grated ginger 1 cup of mixed frozen veggies 1 cup of cooked brown rice 2 tbsp. low sodium soy sauce 1 egg Heat a sesame oil in a medium sized saucepan over a medium heat. Add onion, garlic and ginger and saute until fragrant. Mix in the frozen veggie, soy sauce and brown rice and cook until heated through. STUFF From this video: ► Bento Box: http://amzn.to/2huhKly ► Mini Cookie Scoop: http://amzn.to/2hxOaNx CHICKEN CAESAR SALAD RICE Ingredients 1/2 cup romaine hearts, chopped small 2 Tbsp croutons 2 Tbsp parmesan cheese 2/3 cup wild rice, cooked 2 oz chicken breast, cooked & chopped (omit for vegetarian) Caesar dressing (1.5 T Greek yogurt, 2 t parmesan, 1/2 t olive oil, 1 t lemon juice, 1/4 t anchovy paste, 1/2 t Dijon, 1 t garlic, 1/8 t Worcestershire, salt & pep to taste) Procedure Combine Caesar dressing ingredients in a food processor. Set aside. Toss all salad ingredients together. Add dressing and toss to coat. Enjoy! ZUCCHINI CORNCAKES Ingredients 1 cup canned corn 2 cups zucchini, grated 2 eggs 2 egg whites 1/4 tsp garlic powder 1/4 tsp onion powder 1/4-1/2 salt & pep, to taste 1/3 cup shredded cheddar cheese 1 cup flour (oat for GF, or AP or wheat) 1/4 cup onion, diced Procedure Mix all ingredients together, seasoning to taste. Heat a skillet over medium-high heat and spray with cooking spray. Scoop out a heaping tablespoon of the mixture and transfer it to the skillet, molding into a flat patty between 1/4” and 1/2” (0.5-1.25cm) thick. Allow to cook 3-4 minutes on each side, until golden brown. Enjoy! VEGGIE PACKED SALSA Ingredients 1 1/2 cups tomatoes, diced 1/2 cup cauliflower rice 1/2 cup yellow bell pepper, diced 1/2 cup zucchini, diced 1/4 cup red onion, diced 1/4 cup cilantro, chopped 1 lime, juiced 1 tsp olive oil 1/4 tsp cumin 1/4 tsp salt & pep, to taste Procedure Mix all ingredients together. Season to taste with salt & pep, and any additional spices you prefer! We then had some delicious bamboo pounded noodles and wonton, and then continued to have dinner at a famous dai pai dong. 00:29 Sun Hang Yuen (新香園 堅記 Thank you to Josephine for this recommendation) - For breakfast in Hong Kong we headed over to Sham Shui Po and went to a classic Hong Kong cafe and restaurant called Sun Hang Yuen (新香園 堅記). I ordered my usual hot lemon tea, a glass of black tea with a half of a lemon chopped up inside. It was wonderful. We then had a beef and scrambled egg sandwich, which was surprisingly much better than I thought it was going to be. The bread was toasted wonderfully and the beef and eggs on the inside tasted so good, fried in what I think was butter. Total price - 33 HKD ($4.25) 4:58 Sham Shui Po market - After eating breakfast we walked around the Sham Shui Po market, a local fresh wet market in Hong Kong. The market was busy and stocked with everything you could imaging that goes into Hong Kong food. 6:29 Kwan Kee Bamboo Noodle (坤記竹昇面) - There are many famous restaurants in Hong Kong that serve egg noodles and wonton, but I really wanted to find a restaurant that specialized in bamboo kneaded noodles, which is becoming harder and harder to find in Hong Kong. So finally I found a place called Kwan Kee Bamboo Noodle (坤記竹昇面), a new restaurant that uses the owner s family recipe and technique for making his noodles. I was hoping to get to see the noodles being made, but unfortunately they weren’t making them at the time we got there to eat. Nevertheless, the noodles were still made using a bamboo pole to knead the dough. The noodles were amazing, had such a fantastic texture to them, and the wontons were equally as delicious. It was a fantastic noodle eating experience in Hong Kong. Total price - 84 HKD ($10.83) 13:11 Mong Kok, Ladies Market - Mongkok is one of the most famous areas in Hong Kong for shopping, and we walked around the area for a little bit. Ladies Market is a walking street flea market where you’ll find everything from clothes to souvenirs to luggage. 16:40 Tsim Sha Tsui, Tsim Sha Tsui Promenade, Star Ferry - 2.3 HKD ($0.30) - After walking around Mongkok we took the bus over to Tsim Sha Tsui to walk around and enjoy the views of the skyline of Hong Kong. 18:26 Tung Po Restaurant at Java Road Market (Thank you to Charles for this recommendation) - For dinner, we went to Java Road Market, and to a restaurant called Tung Po, that’s a well known dai pai dong restaurant within the market. They serve a huge menu of different Cantonese and even Thai dishes. My wife and I ordered a couple of different dishes, the highlight of the meal being the razor clams stir fried in black bean sauce. In addition to the food, the ambiance of the restaurant is exactly what you want in Hong Kong. STUFF From this video: ► Bento Box: http://amzn.to/2huhKly CREAMY TUNA SALAD STUFFED PEPPERS Ingredients 1 5 oz can tuna 1 Tbsp mustard 2 Tbsp Greek yogurt 1 Tbsp hummus 2 Tbsp sundried tomatoes, chopped 2 green onions, chopped salt & pep, to taste 6 mini peppers Procedure Drain water from tuna can and transfer tuna to a bowl. Add in remaining ingredients (except for peppers) and mix to combine, seasoning to taste with salt & pep. Slice one side of the pepper off lengthwise to create a cavity. Spoon the tuna salad into the peppers. Enjoy! ROASTED CHICKPEAS Ingredients 1 15 oz can chickpeas 2 tsp olive oil 1/4 tsp salt 1 tsp chili powder (or other spices) Procedure Preheat oven to 375°F. Drain and rinse your chickpeas, then dry them off between paper towels. Don’t worry if some of the skins pop off. Toss the chickpeas in the olive oil, salt and chili powder. Coat thoroughly. Transfer to a baking sheet lined with parchment and sprayed. Bake 30-40 minutes, tossing once or twice. Allow to cool, as they will continue to crisp up. Enjoy! GREEN BEAN & TURKEY BACON SALAD Ingredients 1 1/2 cups green beans 3 slices turkey bacon, chopped 1/4 cup onion, chopped 3 Tbsp walnuts, chopped 1 lemon, juiced 1 Tbsp grainy mustard 2 tsp olive oil 1/4 tsp red pepper flakes 1 tsp garlic, minced Procedure Slice the ends off of the green beans and cut them into pieces (about 1”-1 1/2” each). Add beans to a pot of boiling water and blanch for 2-3 minutes. Remove with a slotted spoon and transfer to an ice bath for a few minutes to stop the cooking process. Whisk together lemon juice, mustard, olive oil, red pepper flakes, and garlic to make your dressing. Add blanched beans, bacon, onion, and walnuts, tossing to coat. Lasts 3 days in the fridge. Bring to a boil, stir once, and turn heat down to low. Cover and cook until rice is soft (around 40 minutes). Remove pan from heat. Leave covered for 5 minutes. Stir in veggies and sesame seeds. Transfer to a medium bowl. Allow to sit until cool enough to handle (about 10 minutes). Use a cookie scoop and your hands to roll/mold mixture into small balls (around 1” each). Store in the fridge. Enjoy with soy sauce on the side! Lasts 3-4 days in the fridge. BEAN SALAD Ingredients 1 15 oz can black beans 1 15 oz can garbanzo beans 1 15 oz can corn 1 14 oz can diced tomatoes ½ cup onion 1 lime, juiced 1 lemon, juiced 1/2 tsp cumin 1/4 cup cilantro 1/2 tsp chili powder salt & pep, to taste Procedure Drain & rinse all canned ingredients. Toss all ingredients together until well combined. Chill in the fridge—this gets better the longer it sits! Enjoy! Lasts 4-5 days in the fridge. BRUSSELS SPROUTS SLAW 2 cups Brussels sprouts 1 pear, cut into matchsticks 3 Tbsp slivered almonds 3 Tbsp dried blueberries 1 Tbsp lemon juice 2 tsp olive oil 1 tsp maple syrup/honey 1 tsp Dijon mustard 1/4 tsp salt Procedure Place Brussels sprouts into the food processor and pulse until chopped into “slaw” pieces. Whisk lemon juice, olive oil, maple syrup, Dijon mustard, and salt to make your dressing. Lightly toss Brussels sprouts slaw, pear matchsticks, almonds, blueberries and dressing together, coating completely.
