Yuji Haraguchi is a butcher and owner of the fish market Osakana. In this episode of Handcrafted, Haraguchi shows Bon Appétit how to butcher a whole tuna and explains every cut of fish you would see at sushi restaurants. To do this, Haraguchi uses five knives: the Yanagi, which is used for slicing sashimi, the Mioroshi Deba filleting knife with narrow thin blade, the Deba single-edged knife used for breaking down the whole fish, the Gyuto versatile multipurpose chef s knife, and the Yo-Deba. He breaks down the tuna into back loin, belly loin, pelvic fins, bones, and collars. From there, the cuts are broken down into saku blocks and sashimi like toro, chu-toro, sinews, sankaku, akami, tuna tartare, and aburi. This video is all about the Camp Chef PG24DLX Deluxe Pellet Grill Smoker, I have been using it for over 1yr and had great experience with it. I most use it for my 2nd channel sous vide everything now. All the food you have seen on this video is from sous vide everyrhing. What I do is smoke it for that amazing flavor then finish it with sous vide. Keep in mind by using it with sous vide, a bag of pellet lasts me a very long time as I am not using the smoker to cook the food but just to season the food. Jay Fai (ร้านเจ๊ไฝ) is no doubt one of the most legendary Thai street food restaurants in Bangkok - some people are loyal fans, others say that it’s overpriced. It’s a Thai restaurants in Bangkok that I had been wanting to eat at for a long time, but never got around to it - partly because it is so expensive. So finally one day for lunch, Ying and I drove over to central Bangkok to try Jay Fai (ร้านเจ๊ไฝ) for the first time. But really quickly, about the name.... In Thai, Jay (เจ๊) means a Chinese Aunty and Fai (ไฝ) means a mole, yes a mole. What I can tell you first about the restaurant is that the owner is absolutely awesome. She wears ski goggles and a snow cap while she’s cooking, and she cooks over huge fire charcoal, fanning the flame as she expertly cooks. She’s also quite a character, and she loves to chat - so while I was filming she shared all about herself, and how her method of cooking her legendary Thai crab omelet ensures that it doesn’t soak up very much oil. It’s indeed the most amazing omelet you might ever see in your life. Crab omelet (ไข่เจียวปู) - You can either order the 800 THB or the 1000 THB crab omelet, I went with the 1000 THB. It’s huge, but only uses 2 eggs, but it’s packed with shell less crab nuggets. The omelet is cooked burrito style, and it’s massive. It’s a must order when you eat at Jay Fai (ร้านเจ๊ไฝ). Drunken noodles (เส้นใหญ่ผัดขี้เมาทะเล) - Her version of Thai drunken noodles (pad kee mao sen ya) is the dish I would come back for over and over again. Again, it’s not cheap, but the quality of seafood and the seasoning that she uses is superb. The balance of flavor will blow your mind - it’s really the best plate of Thai drunken noodles I’ve had in Bangkok. Tom yum goong (ต้มยำกุ้ง) - For our final dish we tried Jay Fai (ร้านเจ๊ไฝ) tom yum goong. Again, massive prawns and seafood were used, and she cooked it over charcoal. It was awesomely delicious, sour, and flavorful. Conclusion: Eating at Thai street food restaurants like this can be all about expectations. You have to go in knowing the prices are very high and you’re going to spend way more money than going to any other corner Thai street food restaurant. That being said, it’s a one-of-a-kind historical culinary legend of a restaurant in Bangkok. I thoroughly enjoyed my experience eat at Jay Fai (ร้านเจ๊ไฝ), and it was an honor to stand there and talk with Jay Fai (ร้านเจ๊ไฝ), and then eat her cooking. Add green onion, and chopped red bell pepper and cook. Mix eggs, salt, Black pepper and milk and pour egg the mixture into skillet. Cook eggs until top is almost set. Top with avocado and shredded Cheddar cheese, fold over and serve immediately. Egg-White With Feta, Spinach, And Mushrooms 200 calories (1 serving) Ingredients 1 tbsp olive oil 2 egg whites 1 egg 1/2 cup chopped fresh spinach 1/2 cup chopped button mushrooms 1 oz feta cheese 1 tsp fresh cilantro Preparation Whisk together the egg and egg whites. In a skillet add the olive oil, and cook spinach over medium heat until spinach is wilted add mushrooms and cook. Reduce to low heat, and add eggs. Cover, and cook 3 minutes, until eggs are firm. Top with feta and cilantro. and Serve. Tomato, Artichoke, And Feta with Eggs 190 calories (1 serving) Ingredients 1 egg 1 egg white 1 tbsp olive oil 1/4 cup chopped tomato 1/2 cup canned artichoke hearts, or boiled 3 Tbsp feta cheese Preparation Whisk together egg and egg white. In a skillet add olive oil, cook tomato, artichoke, for 2 minutes over medium heat. Reduce heat to low, and add eggs. Cover, and cook 3 minutes, until eggs are firm. Top with feta. Serve with toast. Turkey Sausage With Eggs 360 calories (1 serving) Ingredients 3 oz low fat low sodium turkey sausage 1/4 1/2 cup onion, diced 40g 1/2 cup baby spinach 1/4 1/2 cup tomatoes, diced 50g 1/8 1/4 1/2 cup reduced-fat cheddar cheese 2 whole eggs Preparation In a skillet add olive oil add sausage and cook until browned and remove the oil with a kitchen paper and add a little oil and cook onion, spinach, tomatoes for 2 minutes. Evenly divide amongst six 8 ounce mason jars, pop on the lid and store in a cool dry place. When ready to eat pour about 1/2 cup boiling water or milk over the top and stir. Top with any additional toppings that excite you and enjoy. IMMUNITY BOOSTING GREEN CHICKEN SOUP 1 tablespoon extra virgin olive oil 1 small onion, chopped 1 green bell pepper, chopped 2 carrots, chopped 2 stalks of celery, chopped 3 cloves chopped garlic 1 teaspoon ground cumin 2 teaspoon dried oregano 12 ounces shredded chicken (I like using a rotisserie) 2 small zucchini, chopped 1 cup frozen corn 6 cups low sodium chicken broth or homemade stock 1 bunch cilantro, stemmed 1 jalapneo or serrano pepper, chopped A few handfuls of baby spinach, chopped Salt and pepper to taste Heat olive oil in a large pot and add in onions, pepper, carrots, and celery. Season with salt and pepper and cook for 8-10 minutes or until the veggies begin to look tender. While veggies are cooking, blend cilantro, serrano pepper, 1 clove garlic and 2 cups of broth in the blender. Set aside. Once veggies are tender, season with cumin, oregano, and a little more salt and pepper, stir well and cook for another 2 minutes. Add shredded chicken, zucchini, corn, remaining chicken broth and the cilantro broth you blended in the blender. Bring to a boil, reduce down and simmer for 10 more minutes or until your veggies are tender. Finish with a few handfuls of baby spinach and enjoy! Nutrients per 1/6th of recipe (about 1.5cups): Calories: 189; Total Fat: 3g; Saturated Fat: 0.9g; Cholesterol: 66mg; Carbohydrate: 11.8g; Dietary Fiber: 1.7g; Sugars: 5.2g; Protein: 27.7g TURKEY SPINACH HUMMUS WRAPS 1 large sprouted tortilla 1/4 cup hummus big handful of spinach 3 ounces organic turkey breast Warm tortilla on the stove top. Spread with a layer of hummus, pile on your spinach and turkey and fold in half. Enjoy! Calories: 438; Total Fat: 16.9g; Saturated Fat: 2.3g; Cholesterol: 63mg; Carbohydrate: 33.1g; Fiber: 7.7g; Sugars: 0.1g; Protein: 35.3g TURKEY MEATBALLS WITH APPLES + ONIONS 1pound extra lean ground turkey 1/2 cup diced red onion 1/2 cup diced green apple 1 teaspoon garlic powder 1 tablespoon poultry seasoning salt and pepper to taste 1 egg Pre heat oven to 425 Fº Combine everything in a large bowl and mix until all of the ingredients are just incorporated. Roll into meatballs and place on a rimmed baking sheet. Bake for 12-15 minutes or until cooked through. Cool and store in an airtight container for up to 5 days in the fridge. Makes 16 meatballs.
