It s day #8 of our 8-state 2018-2019 Southeast USA Winter Tour and for this food challenge I m at Love Empanadas in Dalton, Georgia. I will take on their 6lb "Whole Lotta Love" Empanada Challenge and try to finish everything within the 30 minute time limit!! Four topping/filling options are required and each one makes up 1/4 of the empanada which is split into quarters. I got mine filled with savory options: buffalo chicken, chipotle chicken, beef pot pie, and mozzarella cheese & spinach. There is a 30 minute time limit to finish everything and winners receive the meal free and spot on the Wall of Fame!! Tofu scramble has become a vegan classic. We have slaved away in the kitchen for years perfecting this recipe and we think this is the best version yet! Perfect for breakfast, perfect for lunch and also perfect for your dinner! If you love cooking quick easy meals that are super healthy, then this is for you! What is your favourite vegan breakfast? Let us know down below! Here is what you need to know: Ingredients: 1 x 280g block of firm tofu 2 garlic cloves 3 spring onions 1 x 300g block silken tofu 1⁄2 tbsp dairy-free butter 1⁄4 tsp ground turmeric 1 tsp black pepper 1 tsp kala namak (black salt), optional Method: Peel and grate the garlic | Finely slice the spring onions | Place the silken tofu in the food processor and blitz to a smooth cream Put the frying pan over a medium heat | Add the dairy-free butter and melt | Add the sliced spring onions and stir for 3–5 minutes | Add the garlic and stir for 1 minute | Add the turmeric, black pepper and kala namak and stir them into the onions. Put the bagels in the toaster to toast Back to the scrambled tofu | Drain any liquid from the pressed firm tofu| Pour the creamed silken tofu into the frying pan and stir everything together | Once the silken tofu has taken on the colour of the turmeric, crumble the firm tofu into the pan | Fold everything together for 1–2 minutes to completely warm through | Take the pan off the heat. 🖤💛Our brand new book, HOW TO LIVE VEGAN comes out on October 3rd in the UK!
