In this episode, we went to the hills of Ariccia, a town famous for its porchetta (slow roasted pork). We met Pierro, who has one of the BEST porchetta shops in all of Italy. He showed us how and where his porchetta is made, at the centuries-old Leoni Randolfo porchetta factory. We saw the process from start to finish. The porchetta here only uses 4 ingredients: rosemary, dried garlic, salt and pepper. It is then slow roasted for several hours to perfection, before being shipped to local shops, still fresh out of the oven. We then go to Pierro’s shop in Trastevere: La Norcineria de Iacozzilli, to sample his famous meats. It was so delicious!
