Slice top or side off of each pepper, then remove seeds and fibers. Chop leftover bell pepper pieces to use in stuffing mixture. To make stuffing, saute onion in a saucepan with oil for 4-5 minutes, until tender. Add leftover bell pepper pieces, mango, black beans and saute another 2 minutes. Add diced tomatoes, chili powder, cumin, salt, and pepper and stir in rotisserie chicken. Season to taste. Stuff filling into prepared peppers. Top with cheese, if desired. Roast at 375°F (190°C) for 30-35 minutes before storing, or store uncooked peppers and roast during the week. Per serving, yields 8 363 calories | 18g fat | 27g carbs | 6g fiber | 12g sugars | 24g protein PEPPER & MANGO SOUP 3 yellow bell peppers 2 mangos, chopped 1 cup vegetable broth 1 lime, juice 2 tsp fresh grated ginger 2 Tbsp rice vinegar ½ tsp salt ¼ tsp pepper 1-2 cups rotisserie chicken to mix in (optional – if not, add rice or side salad for substance) Broil (500°F-550°F) whole bell peppers for 10-15 minutes, until blistered. Allow to cool for 10 minutes before removing skins. (It helps to do this under running water!) Rough chop peeled peppers and add to blender with remaining soup ingredients. Blend until smooth and season to taste. Stir chicken into blended soup. Store for meal prep. A&Z #794 - Atlas vs Primanti Brothers Classic Sandwich Challenge at the original Strip District location of Primanti Brothers in Pittsburgh, Pennsylvania. Back in October 2019 after getting home from my 3-country Asia trip, I flew up to Pittsburgh, Pennsylvania so I could try two food challenges in the area, and then head over towards Philadelphia, PA for a few more. For event #2, I traveled from Youngstown, Ohio back to Pittsburgh, PA so I could attempt the brand new Classic Sandwich Challenge at the original Strip District location of Primanti Brothers which was so delicious!! Primanti Brothers was founded back in 1933, so I was given 33 minutes to finish 5 of their classic sandwiches plus a 23oz IC Light beer produced by Iron City Brewing Company which also originated in Pittsburgh. For my 5 sandwiches, I got their turkey, capicola, pastrami, tuna salad, and famous Pitts-burger. The sandwiches were featured on Man vs Food Pittsburgh many years ago, and since then so many people have requested that I go there. Next, we go to the Golden Temple, Harmandir Sahiba, to marvel at its beauty. It was free to enter, but you must cover your head. Then we head deep into OLD Amritsar to taste its history. Our first stop was at Punjabi restaurant Kesar Da Dhaba, where they serve a Punjabi thali (255 INR / 3.58 USD) as well as some regional desserts, kulfi (70 INR / 0.98 USD) and phirni (50 INR / 0.70 USD). Gian Di Lassi makes them fresh and has a unique Punjabi flavour, although it is very sweet (120 INR / 1.69 USD). Before leaving Old Amritsar, we wanted to savour some meat! We went to Joginder Dhaba for some buttery chicken curry (350 INR / 4.92 USD), and the chef was nice enough to show us all the different meats he had cooking street side. We were super full on Indian STREET FOOD but we had to make one more stop at the end of the day. We wanted to eat the famous Punjabi fried fish and went to Makhan Fish and Chicken Corner. This place has been around since 1962!!! We ordered their deliciously thick river fish that is fried to perfection (390 INR / 5.48 USD), chicken tandoor (240 INR / 3.37 USD), mutton tikka (420 INR / 5.90 USD) and of course, butter chicken (350 INR / 4.92 USD). It was a full Punjabi FEAST and the fish was so DELICIOUS!!! Back in mid November 2019, as part of my "4th Quarter 2019" Food Challenge Tour, I traveled up to South Dakota and northwestern Iowa for 4 delicious events. For event #1, I went to The Rebel Rooster Bar & Eatery which is located inside the Ramada Hotel & Conference Center in Mitchell, South Dakota. I took on their brand new Triple Threat Sandwich Challenge which included supersized versions of their already giant Cuban Sandwich, Extreme Chicken Bacon Club, and BBQ Cheeseburger. I had 1 hour to finish everything, including 10oz of Rebel Rooster s honey-glazed onion rings. This challenge had 2 options, and I could try the challenge with 3 pints of local beers ($65), or without ($50).
