Along with his wife, they serve burgers from the back of a motorbike. But they are not just your ordinary burger. Uncle has so much style and and mixed so many ingredients, it’s impressive. What you want to order is the egg omelet wrapped burger. The part that impressed me the most is how Uncle CC splits the burger patty in half after cooking it, and squeezes in an insane amount of sweet tangy sauce before squeezing sauce all over the burger patty and all over the top of the burger. It’s one of the sauciest, messiest, burgers you might ever eat! The taste is a little too sweet for me, I think because of the huge amount of sauce, but it was definitely fun to eat, and Uncle CC is one of the nicest guys you will meet. Process until butter is flaked off into little pea-sized nubs, coated by the flour mixture. 3) Add in ice cold water and vodka while pulsing in the food processor until a shaggy dough is made. 4) Remove and knead until a firm dough forms. You want to still see some butter striations. 5) Create two discs. Wrap in plastic and place in the fridge for 1 hour until ready to use. 6) Remove one disc from the fridge and roll out with rolling pin and flour for dusting. 7) Place in a deep pie dish and begin to crimp! 8) Once crimped, begin to dock the bottom of the pie dough with a fork. Add parchment paper to the center of the pie, add your pie weights and bake for 15 minutes at 325. 9) Remove from the oven and cool slightly. Remove pie weights. Equipment * Food Processor * Plastic Wrap * Rolling Pin * Pie Pan * Parchment * Pie Weights Step 2: Make the Filling Ingredients * 1 (15 ounce) can evaporated milk * 1 ¾ cup pumpkin puree * ½ cup granulated sugar * ½ cup dark brown sugar * 2 tablespoons all purpose flour * ½ + ¼ teaspoon kosher salt * 2 ½ teaspoons pumpkin pie seasoning * 1 tablespoon maple syrup * 2 teaspoons vanilla * 3 large eggs 1) Combine evaporated milk, pumpkin, white sugar, brown sugar and flour together. Whisk until smooth and the sugar is dissolved. 2) Add in the salt, pumpkin pie seasoning maple syrup and vanilla paste. 3) Stream in eggs until fully incorporated. 4) Place in par-baked pie crust and bake for 60 minutes, until the pie is slightly jiggly in the center, but firm on the sides. 5) Cool at room temperature and set in fridge overnight. A&Z #881 - Randy Santel "Atlas" vs Lola s Lumpia $100 Filipino Food Truck Challenge hosted by Lola s Lumpia Food Truck outside Oak Road Brewery in Summerville, South Carolina!! After finishing up my food challenges in North Carolina, I traveled down to South Carolina where I attempted lots of delicious food challenges as part of my 2020 Southeast USA Tour. For event #3, I traveled down to Summerville, South Carolina which is just outside Charleston, SC. I was the first person to attempt and I helped kick off the Lola s Lumpia $100 Food Truck Challenge hosted by Lola s Lumpia Food Truck outside Oak Road Brewery. I had 45 minutes to finish lots of traditional Filipino foods which were so delicious!! There were 48 lumpia total which the food truck is known for, with 16 / Each of 3 different meats - chicken, pork, and beef. I also got to enjoy an adobo pulled pork sandwich, 1/2lb of Filipino pancit, 2 Siopao, a big handful of shrimp chips, and I tried drinking 3 delicious beers produced by Oak Road Brewery. I was trying to win my $100 Filipino food truck dinner free, a sweet t-shirt, and the first spot on Lola s Wall of Fame. Thank you to Mark and his wife (Lola s owners) and their team for the wonderful food and hospitality, and thanks also to Ben (owner of Oak Road Brewery) and his team for the delicious beers and drinks!! The beers I drank were only to promote the brewery and they were not part of the actual food challenge. The base food challenge has no drink requirements. - There is a 45 minute time limit.
