Katina and I decided to kick off our 2021 food challenge touring in Florida, and our February Florida Tour turned into a February & March Florida Tour!! I attempted lots of food challenges all over the state of Florida. For food challenge #34, I traveled to The Twisted Tuna - Port Salerno near Stuart, Florida which is on the Treasure Coast of Florida. I met up with my friend Matthew "Nude Food Dude" Cuevas and we attempted The Twisted Tuna s new Epic Seafood Feast Challenge. We had 1 hour to finish so much food from their menu - 4 epic sushi rolls, Chef T s Thai Shrimp, seafood pasta with lobster, a giant Twisted Grouper Sandwich, a clam pizza, 2 sets of chicken wings with different sauces, and 2 big slices of orange cake for dessert. We had the privilege to spend a few days Muang Pon, a Shan village, where I learned so much about their culture, and especially the unique Shan food. This was actually my first full Shan meal, and I was blown away by the incredible flavors, spices, and ingredients used in their cooking. Shan / Thai Yai (ไทใหญ่) is very different from Thai food. Shan food is influenced by Burmese food, Southern Chinese food, and still its own cuisine. The Shan use something called “tua nao” or fermented soy beans in almost every dish. It’s one of their main signature ingredients for flavoring boosting umami. For this incredible Shan food meal, we had a number of local dishes. One of the main dishes was a local Shan chicken curry, which was fantastic. Another dish they cooked was “lung” of Shan meatballs - which I think could be the best meatballs in the world. For these meatballs, they made them with frog and tons of spices and chilies. Although they didn’t fully stick together, the taste was outstanding, the best meatballs I’ve ever had. Add in boiled egg yolk and mold mixture into a ball shape. Place the pounded rice cakes on banana leaves. Place it on the grill for 10 minutes and then serve with dipping sauces: Hot chilli (MSG, chillies sauce, and salt) and pounded grilled chillies with salt. 🐀BAMBOO RAT GASTRIC ACID SOUP: Add fresh Bamboo rat blood in the rice wine, and take shots. For the Gastric acid soup: Mince the intestines and stir-fry them with salt, MSG add minced ginger. Add water and cook until the soup boils. Add lime leaves and passion fruit leaves. Cook for 2 minutes then serve. 🐀STIR-FRIED BAMBOO RAT WITH LEMONGRASS & CHILLI: Grill the bamboo rat then cut in bite-sized pieces. Stir-fry with oil, MSG, salt, garlic, lemongrass, scallion and chillies. 🐟GRILLED LOACH: Cut the cleaned loaches in half and remove their guts. Season with salt, MSG, garlic, chillies, lemongrass and pepper. Put them on skewers and grill on wood fire. 🐍SNAKE OMELETTE: Cut the cleaned snake in 10cm chunks. Mince the snake meat. Add eggs, MSG and salt.
